I went on a cooking jag yesterday!
My son was home sick with the flu for almost a week, and I have been having lots of pain due to dental issues, so I went a few days without any REAL cooking.

Yesterday, I made up for lost time! LOL Mostly because I had fresh produce that had started to go bad ( I only shop once a month, so I have to use some stuff up quickly).

I made spaghetti with meat sauce with lots of veggies in it. I usually make meatballs, but I had about 3 pounds of ground chuck (getting old) and needed browned ground beef for another dish. I put finely chopped celery, sauteed mushroom, onions, green pepper and 2 zucchinis in the sauce. I used 2 #10 cans of tomato sauce, since I needed sauce for 2 other dishes.

I made a batch of eggplant parmesan, before I added the meat to my spaghetti sauce.

I made 2 large pans of enchilada-ed bean and beef burritos and a smal pan of beef and bean burritos with no sauce on them.

Does anyone else do binge cooking? LOL
I'll be freezing some of it, I'm sure.

1. Binge cooking... what a great name for it!!
I do the once a month thing about every two months (because we always end up with leftover nights and nights where bread, milk, a salad and a can of soup are the end all and be all of cuisine) and those are busy days.

That sauce sounds really, really tasty....

I hope your mouth feels better soon... and your son has recovered.

2. I do "cooking jags" in the winter -
will have a pot of blackeyed peas cooking while also cooking brunswick stew. On a snowy or rainy grey day, it's comforting to have pots of food on the stove. Plus, it's great to have stuff in the freezer for those cold, dark nights when the last thing I want to do is cook when I get home!

That spaghetti sauce does sound delicious!
