The recipe is in 2 parts, mashed potatoes and the mushroom loaf. Adjust as needed.
You'll need: 1-2 lbs potatoes 2 cloves garlic 2 tablespoons butter 1/2 cup sour cream or 1/4 cup french onion dip and 1/4 cup sour cream 1 cup Chicken or veggie broth 1 medium onion, cut up or chopped 1 clove garlic, chopped 1/2 cup bread crumbs or 1/4 crumbs and 1/4 stuffing mix 1 egg (opt.) 2 tablespoons ketchup 1 tablespoon mustard 2 shakes Worceshire sauce 1/4 cup shredded cheese (casserole or pizza) salt and pepper
Mashed potatoes
1-2# potatoes, oiled and baked 40-45 min at 300F 2 cloves garlic 2 tablespoons butter 1/2 cup sour cream or 1/4 cup french onion dip and 1/4 cup sour cream 1/2 cup broth to moisten Spices at your discretion, salt, pepper, cayenne pepper are mine
Peel warm potatoes and cut into chunks. Add the remaining ingredients, mash /w masher. Add broth as needed. Put aside.
Mushroom loaf is meat loaf /w mushrooms
12-16 oz. mushrooms, white and portabella, cut into chunks 1 medium onion, cut up or chopped 1 clove garlic, chopped Saute these in oil. Put into mixing bowl and add
1/2 cup bread crumbs or 1/4 crumbs and 1/4 stuffing mix 1 egg (opt.) 2 tablespoons ketchup 1 tablespoon mustard 2 shakes Worceshire sauce salt and pepper and a touch of ginger
Mix well. Pour into loaf pan, top with shredded cheese, cover with mashed potatoes. Bake for 30min at 350F
Remove and enjoy. Serve /w salad or as side dish. :9
