The finished cupcake cake (semi-large photo warning)

A couple of weeks ago I came here asking for help about how to make a cupcake cake. After getting lots of great advice, it was requested that I post a photo of the cake once it was finished. Here you go:



It's for my Daisy Girl Scout troop and is supposed to be a daisy. Let me know what you think.

10. It's really easy -- also really fattening! LOL!
Two cups of shortening, creamed.

Add 8 cups of confectioner's sugar... mix

Then a 1/2 teaspoon of salt,
2 teaspoons of vanilla (my directions said to use clear imitation, but I couldn't bear it and used the real stuff)
Roughly 6 oz heavy whipping cream

You'll want to add the salt and vanilla, then mix again. Add about 3-4 oz of the whipping cream and mix that first... then add the rest of the whipping cream slowly to get the right consistency you want for your frosting. For placing it over the cupcakes, I needed it to be a little more stiff than you might want for a regular cake.

This makes a pretty big batch -- enough to do two cakes like the one in the photo, 42 cupcakes each -- but is easy enough cut down.

If you want a different color, just add food coloring and/or frosting paste.

:)

I used to do the easy cupcake routine.. The one where you put letters on each cupcake and arrange them to spell "happy Birthday Whoever"..and then some extras with letters.. The boys always loved to spell stuff before they ate them... Mom was not always amused with what they spelled :evilgrin:

I love the center part. Did you use coconut?

Actually the whole thing is great. Tell us what the kids thought of it. They were probably blown away!

9. Not coconut
It's the same frosting, tinted yellow. I put on the first layer with a star tip and then went back over it using the "grass" tip.

12. 42 per cake - 2 cakes
I was expecting about 100 people, but we ended up with about 75. I've still got about 12 cupcakes. Wish I could send them to all of you!
