2 egg whites = 1 egg right?

2 egg whites = 1 egg right?
This is what I remember, but I'm not sure.

I got a fancy pankake and waffle mix last night (lemon pecan). And today I want to make some for breakfast, only I only want to make 1/2 the recipe and I want to use my powdered egg whites. A whole recipe of the mix takes a whole egg and makes about 8 pancakes. Only, I know you can't halve an egg.

I'm just not sure how much egg whites to make. The recipe matrix on the can says one tsp of egg white powder to 1 tsp of water. But nothing on the can says x egg whites makes = x egg.

Somebody talk me through the math, please. :silly:

I saw your question, thought I knew the answer .... and have suddenly suffered a brain fart.

I ***think*** the white of two eggs equals one whole egg. But I'm saying that with no confidence I'm right.

I added "1" egg white and the pancake batter looks right, just medium viscous. So I'll see.

3. The info I have says

1 large egg (without the shell) = 1.7 oz or 3 tbls + 1/2 tsp (or 9.5 tsp)
1 large egg white = 1 oz or 2 tbls (or 6 tsp)
1 large egg yolk = .6 oz or 1 tbls + 1/2 tsp (or 3.5 tsp)


so theoretically, 2 egg whites are a little more than 1 whole egg, but probably close enough for most things

What you would miss by just using whites is the richness and flavor the egg yolk would add (along with the fat and cholestorol....)

Actually, I use a half an egg all the time when making pancakes... I simply crack it into a measuring cup or something and mix it up a little, then use half. I have a dog who is always grateful for the other half if I don't have a need for it....

I imagine your pancakes are long made and (hopefully) enjoyed. They sound great, I hope they were.

To go along with my lemon pecan pancakes I got lemon curd to spread on top, rather than the traditional maple syrup. :9 :9 :9

It was a really nice alternative to taste that tartness first thing in the morning.

It was so good, I'm having them again tomorrow. :D
