beef and onions stir fry tonight....

Quantities are approximate.

My basic stir-fry "brown sauce:"

1 cup chicken stock
1/4 cup dry white wine
1-2 Tbsp sweet soy sauce (kekap manis)
1 Tbsp Chinese light soy sauce
1 Tbsp oyster sauce
2 Tbsp Chinese black vinegar
1 tsp Szechwan pepper corns, pounded to a powder in a mortar
1 slice ginger, about the size of a quarter

Combine all ingredients and reduce the sauce over high heat to about half its volume. Set aside.


The stir fry:

1 lb thinly sliced top round beef strips or other thinly sliced beef
1 medium onion, chopped into big chunks
3 dried black mushrooms, soaked in boiling water and sliced (discard stems and soaking water)
1 tsp minced garlic
2 Thai bird's eye chilis, sliced thinly (or 1 tsp ground chili sauce, or a few dried red chinese chilis (if the later, fry in the oil before any other ingredients)
a handful of brocolli florets
a handful of snow peas
1 Tbsp toasted sesame seeds
9 oz fresh oriental noodles, wide cut
2 Tbsp peanut oil

Heat a steel wok to very high heat, then add the peanut oil. When the oil is smoking hot, add the beef strips. If you have a normal range, like I do, keep the flame at it's highest until the moisture released by the beef is gone and the beef strips are browned, i.e. several minutes. Add the onions, mushrooms, chilis, garlic, brocolli, and snowpeas. Stir fry over the highest heat you can muster for several minutes more, hopefully developing nice browned spots on everything. The vapors will sting your eyes because of the chilis. Perservere. Add the brown sauce and continue to cook while it reduces a bit more, tossing to coat everything. The sauce should thicken enough to coat the other ingredients smoothly. Turn off the heat and cover for 5 minutes or so to finish cooking the vegetables.

Meanwhile, cook and drain the noodles-- about 5 minutes for fresh noodles. Stir the cooked noodles into the beef mix until the sauce is evenly distributed. The sauce should be sweet/spicy/salty/savory in about even proportions. Add the toasted sesame seeds and toss one last time.

Oh, that was awful. Don't tell Old Yeller, my Chinese husband (yes, he knows, he knows), I said that.

I know some about Chinese cooking, so if there's anything specific, just honk, and I'll try to help.

Now, that is, that I haven't banished myself from DU.

There are SEX THREADS?

Democrats have sex?

Wait until I tell Old Yeller ............
