Ground beef appreciation thread
Let's face it, it's red meat, harder to work with if it's lean, usually the first thing on the news to be contaminated with dreadful bacteria, and just plain slipping out of favor.

But without it, far more than hamburgers would be lost! I think of my own pasta bolognese, a red sauce made all the more delightful the less I drain the meat ... meatballs would be just balls ... and chili is just a spicy, poorly-thought-out cassoulet until you add the ground beef.
So a :toast: to ground beef! :D

1. Yesterday,
we had the most glorious ground cow on toasted buns, stuffed with chunks of Tillamook Extra Sharp Cheddar, grilled to heavenly perfection, and served with big, fat slices of sweet onion and homemade aioli.

I join you in your salute to ground cow - :woohoo:

5. My ground-beef recipe of the weekend:
3 pounds or so ripe tomatoes, peeled and seeded (they can be ugly/seconds/etc.)
An onion, chopped finely
If you have a bell pepper of whatever color, seed, chop it and add it
A handful fresh basil
A generous splash of red wine
A small squirt of honey
A few red pepper flakes

Set the whole mess in a slow cooker, on low, several hours. Go for a walk -- it's nice out.

Meanwhile, brown a pound of ground beef. Drain. Also, cook a 12-ounce package of pasta of your choice. We used Wacky Mac Rainbow Spirals, as there would be a three-year-old joining us the next day.

Puree the tomato mixture with a stick blender, add the ground beef, cook 15-30 more minutes in the slow cooker. Add the pasta. S&P to taste. Serve with salad, and if the three-year-old has been whining, a glass of wine (for you, not her).

Enjoy!

i like to use these and mix them also///for tacos...italian dishes...and anything that you generally use ground meat for!

I've been trying to buy organic now, with the mad cow stuff, but, yes, I am a beef devotee. Pizza Bolognese, hamburgers on the grill -- and even a kick-ass meatloaf. I like-y.

I'm gonna make little roast potatoes and creamed spinach too.

I added sloppy joes to this month's menu. I always make meatballs and meatloaf and burgers, but it had been ages since I had sloppy joes.
