Now that the kids are here for the summer, I have been needing to cook full meals every night, instead of catch-as-catch-can dinners of baked potatoes and soy sour cream.
Tonight I made bean loaf, scalloped potatoes, and corn on the cob. It was a huge hit! Here's how I did it:
Bean loaf: I cooked a can of white beans, drained and rinsed, with dried onion, soy sauce, and a little BBQ sauce. Let it boil down until there wasn't much water, then mashed it, put in a greased baking pan, smeared more BBQ sauce on top, and baked at 400F for 20 minutes.
Scalloped potatoes: cut some potatoes really thin, layer with soy cheeze in a Pyrex casserole dish. I got one layer out of each potato. Then I made a roux by heating soy margarine till it bubbled, adding enough cornstarch to absord the margarine, wait till it bubbles again, and stir in soymilk. It has to be stirred constantly to get smooth and thicken. When it had thickened, I poured it over the potatoes, sprinked more soy cheeze on top, covered with tinfoil, and baked at 350F for an hour.
It looked like such a "suburban American mom" dinner that I couldn't believe it! :rofl: So far the kids have had thirds of the bean loaf and potatoes...
