Dealing with tempeh
I'm not a vegetarian or vegan but I like some of the recipes.

I've already learned not to freeze tofu stir fries unless I want to destroy the tofu, but how does tempeh freeze?

I'm planning to make a Thai curry with tempeh this evening, and I'd like to know if I can freeze the leftovers with the tempeh in them or whether I should prepare the veggies and the tempeh separately, as I do when I make tofu stir fries.

Unlike tofu, I think it's fine to freeze tempeh.

How did dinner turn out? Good?

My work ran too late, so I ended up thawing an existing Indian-style curry and eating that. Maybe tomorrow.

3. Tempeh freezes and thaws beautifully.
I haven't ever noticed any texture changes or anything like that.

4. Well, it turned out great
I made it with tempeh, onions, assorted veggies, and a commercially available red curry sauce. There's enough left over for a frozen meal. :-)

I'm still trying to find a dish that this ingredient doesn't improve. :)
