Suggestions please....
I'm going to make a vegetarian spaghetti sauce for tomorrow. I'm planning on adding baby portobellas, onions, and carrots as well as garlic and seasonings. What other vegetables and/or meat substitutes should I include? The vegetarian that this is for is pregnant so I want to make sure it has enough protein.

1. I always put some Tofurkey faux sausage in mine.
Just like regular sausage (taste, texture) but meat-free.

The Italian Sausage variety (red box) is to die for.

2. can you try and use spelt noodles for the spaghetti part?
Spelt has the full spectrum of proteins and is also higher in all of them that wheat, even durham wheat.

3. I love Nate's Meatless Meatballs,
but I prefer to bake them in the oven & serve them on the side. They get a bit squishy if you leave them in sauce for a long time. The danger of baking & serving them on the side, though, is that I nosh on them until I've eaten about half of them!

You can find them in the frozen food section of your health food store.

4. Great suggestions above. You could also try some Boca Crumbles...
...if you want to make it more of a "meat" sauce. But you can't go wrong with any of the ones already mentioned.
