Holy MOLY this vegan cornbread is good.
I just made this recipe:

I can see why it won at the Iowa State Fair. Wowza. Come over and have a piece before I eat the whole pan myself.

It's a real eye-opener too. This is my first foray into eggless, milkless baking. The results are far better than I could ever have imagined.

2. I have never had good luck with using ground flax as an egg replacer,
but I have never heard of boiling it first, either. I'll try this. Thanks!

3. just made this
I made and few changes.

I ground up the flax seed and put in in with the rest of the ingredients including the 6 TBS of water (no boiling first) and added 1/8 c. sucant rather than the 1/4 c. sugar. I also substitued whole wheat flour for the regular white four.

It came out kind of crispy from the flax seeds being added simply ground rather than cooked.

It came out very good and you'd never know there were no eggs nor milk.

5. it is half gone already!
vegan recipe or not, it didn't last long around here (even the cats had a couple of bites). There isn't much left but come on over or wait!

I've threatened to make another big pan of it along with some black bean vegetarian chili as to not have to toss out the rest of the remaining soy milk. I heard no protests! :D
