Bob Barker's Vegan Enchilada Bake
Heehee...Series!

• 12 oz frozen vegan burger-style crumbles (Morningstar Farms' work well)
• 1 packet taco seasoning
• 2 tablespoons vegetable oil
• 1/2 cup finely chopped scallions
• 2 tablespoons all-purpose flour
• 1 cup low-sodium vegetable stock
• 2 cans black or pinto beans, rinsed
• 2 cans enchilada sauce
• 1 bag corn or flour tortillas
• 3 cups vegan cheddar cheese, shredded
• One 4-ounce can green chiles
• 1 small bag of Fritos, crushed

1. Preheat oven to 375 degrees; spray a 9-by-13-inch baking pan with Pam.
2. In a bowl, coat crumbles with seasoning.
3. Heat oil in a skillet over medium heat; add scallions; cook 3 minutes. Stir in flour; cook 1 minute.
4. Add stock; stir 1 minute.
5. Stir in beans; set aside.
6. Cover bottom of pan with enchilada sauce.
7. Place one tortilla layer over sauce; pour bean mixture on top.
8. Follow with a third of the cheese and half the chiles.
9. Add more enchilada sauce and another tortilla layer.
10. Add burger crumbles, more cheese, the remaining chiles, and enchilada sauce.
11. End with the remaining tortillas, enchilada sauce, and cheese.
12. Cover with foil; bake 30 minutes.
13. Remove foil; sprinkle Fritos on top.
14. Pop back in the oven for 15 minutes.

Serve with vegan sour cream. Reheats in the toaster oven really well.

Not sure about the Fritos.... :shrug:

1. About those Fritos . . .
In my younger thinner days before I knew or cared about weight gain, calories, sodium, or fat, I made a dynamite enchilada casserole that called for Fritos. If you have a family that balks at the thought of healthy food, the Fritos might make this a bit more enticing.

4. In Texas it's called Frito Pie
This is pretty similar to the recipe my fiance's mom makes (that I've veganized). :)

2. Mr. Barker used to be my boss and I adore him!
Haven't tried the recipe but just wanted to add that this man, I STILL see him hiking up the notoriously steep Runyon Canyon, like climbing a wall, up by the Hollywood sign, please let me be doing the same at his age! If anybody ever tells you vegans/vegetarians "can't be healthy" point to Mr. Barker or my dad....who became a vegetarian at 68 and a vegan at 72and ditched his diabetes drugs in the process. I'm not vegan myself but I do aspire to be someday. I wish they sold will power at the store, I'd buy a Costco-size of it for sure!

I went to the site and printed it out, there's a yummy picture there of it :9
I'm conning my husband into eating meatless meals sometimes, if it tastes good enough then he's not so picky.

7. Fritos are horrible on their own
just as a chip, but they really do work well in all sorts of Americanized Tex-Mex cooking. I also like to toss a handful on top of a bowl of chili for crunch and -- truth be told -- a little extra saltiness.
