What's your favorite use for nutritional yeast or recipe?

What's your favorite use for nutritional yeast or recipe?
I made a nacho cheese with mine tonight and it was YUMMY!

I have never had the stuff before. Why isn't a product this inexpensive and packed with good nutrition used everywhere? :shrug: It tastes great!

1. I like it on bagels
I take a crunchy toasted bagel, slather on some earth balance non-gmo "buttery spread", then heap on the nutritional yeast. MMMM YUMMY

It's also great for making sauces for pasta and such, but I don't have a recipe handy. I can get it from my friend, though.

How did you make the nacho cheese?

2. Here's the recipe I used, with notes about my variations
1 red pepper, roasted, skinned and seeded. ( I did not skin mine and I included about 1/3 of the seeds )

1 1/2 cups roasted cashews ( mine were unsalted and raw )

1 7 oz. can jalapeno peppers, drained ( I used dehydrated jalapenos from my garden last summer, about half a 1/4 cup dry. )

3/4 cup water ( I used the juice from some stewed tomato's I will be putting in soup tomorrow, plus some of the tomatoes and veggies from the can )

2/3 cup nutritional yeast flakes ( HEY! I stuck to this! *the crowd stands and cheers* )

1/4 cup olive oil

1/4 cup lemon juice ( I forgot this )

1 1/2 Tbs. Soy sauce

1 1/2 Tbs. Tahini ( didn't have any )


I chilled my leftovers today and spread on a pita with a Morningstar Farms Garden Veggie pattie and chopped tomatoes, onion and lettuce for lunch. - Believe it may have been the best sandwich I've yet had in my life.

3. sounds interesting
I've never used nutritional yeast.

So what's the rest of the recipe? just mix it all together? any cooking involved?

6. forgot that part, sorry
just throw everything in a blender and let the blender do its work.

No cooking at all, very quick and convenient.

9. Macaroni "cheese" casserole VEGAN
Cook 3 1/2 cups elbow macaroni or rotini

In a saucepan, melt 1/2 cup soy margarine over low heat. Beat in 1/2 cup flour with a wire whisk and continue to beat over a medium flame until the mixture (called a roux) is smooth and bubbly. Whip in 3 1/2 cups boiling water, 1 1/2 tsp. salt, 2 Tbsp. soy sauce, 1 1/2 tsp. garlic powder, and a pinch of turmeric, beating well to dissolve the roux.

The sauce should cook until it thickens and bubbles. Then whip in 1/4 cup oil and 1 cup nutritional yeast flakes.

Mix part of the sauce with the noodles and put in casserole dish, and pour a generous amount of sauce on top. Sprinkle top with paprika and bake for 15 minutes in a 350 degree preheated oven. Put in a broiler for a few minutes until "cheese" sauce gets stretchy and crisp.

note...if you use nutritional yeast powder cut it in half or at least by 1/4 cup or else it will be to strong.

10. melty nutritional yeast "cheese" VEGAN
1/2 cup nutritional yeast flakes
1/2 cup flour
1 tsp. salt
1/2 tsp. garlic powder
2 cups water
1/4 cup margarine
1 tsp. wet mustard

mix dry ingredients in a saucepan. Whisk in water. Cook over medium heat, whisking, until it thickens and bubbles. Cook 30 seconds, then remove from heat, whip in margarine and mustard. It will thicken as it cools but will thin when heated, or add water to thin it.

Variation: For a richer, stretchier sauce that's good on pizza, substitute for the flour: 1/4 cup ornstarch and 2 Tbsp. flour. Instead of margarine, whip in 1/2 cup of oil after it cooks, and add as much as 1 cup of water at the end, or as needed to make a thick, smooth sauce that pours easily. Pour it on pizza and for the few minutes of baking, put pizza under broiler for a few minutes to form a stretchy, golden brown speckled skin (yummy).

11. For homemade instant broth

I grind it to a powder in a coffee mill with dried shiitakes, kelp, dried garlic, salt and whatever seasoning herbs seem appropriate ("poultry seasoning" - thyme, sage, marjoram etc, makes mock chicken broth), then use it added to water for soup base. Also good when your feeling a bit under the weather with a cold - add a pinch of cayenne to open your sinuses.

12. I make something similar from the Uncheese Cookbook.
The All-Season Blend. It's mostly nutritional yeast & a variety of other seasonings. It's great as a broth, especially if you add a teaspoon of miso to the cup. Wonderful for upset stomach or on a gloomy day.

15. Same here!
I grind it with almonds with just a tad of salt and have it in a big shaker (Recipe from 'Garden of Vegan'--Excellent cook book if you want to go vegan). I add a sprinkling of garlic powder and vegan 'butter' ('Better than Butter 'brand made of cold pressed oils--it's not greasy) to the popcorn and it is delicious!

I also like to put nutritional yeast in the flour mixture I roll tofu cubes in before I deep fry 'em.

Nutritional yeast is a good source of B vitamins, especially B12, which is a must for vegans. Love it!
