9. That is not a California Roll.

California rolls are made "inside-out", with the nori on the inside. I've seen two different reasons for the nori being on the inside: Americans had trouble biting through the nori on the outside, and Americans didn't like seeing the nori on the outside. Take your pick.

Regardless, those were not California Rolls.

Ichiro Mashita created the California roll. Traditionally sushi rolls are wrapped with nori on the outside, but also eventually made the roll "inside-out", i.e. uramaki, because Americans did not like seeing and chewing the nori on the outside of the roll.
