on the grill tonight....
Fresh salmon fillets marinated in mirin, dark soy, and garlic, grilled over apple wood. Served with this year's first two artichokes from the garden, a classic Caeser salad, and some homemade wasabi mayo.

1. Can't top ya but can come very close
Grilled jumbo shrimp (Emeril's creole mustard honey marinade) over pecan wood. Last spinach salad of the season (its already bolting). Fettuccine Alfredo with garden asparagus.

2. Question.
How long to you marinate the salmon for. We do a lot of grilled salmon, but haven't tried to marinate it. Sounds delicious.

We are going to be grilling halibut tonight.

11. sorry for the late reply but i had to do some work....
I marinate for an hour or two at room temp. Equal parts Mirin, dark soy, and olive oil (coupla Tbs each) and a few crushed garlic cloves. Grill until just done, salt and pepper to taste afterwards.

I often serve this with a Thai hot sauce-- 1/4 cup white vinegar, 2 Tbs good fish sauce (nouc mam nhi), and 10 or so minced Thai chilis.

6. Sounds very yummy! Have you tried
salmon with a ginger/lime marinade? It is one of the best salmon recipes I have ever had. And I'm a born and raised Seattle-ite!

Just combine

1/3 c soy sauce
1/4 c fresh lime juice
1 tsp (or more) minced ginger
1/2 tsp fresh chopped tyme
2 cloves garlic, chopped
with
4 salmon fillets

just mix it up, grill it up, and eat it up! Try it, you'll like it

For us, brined pork tenderloin: quart of cold water, 1/4 cup of salt, 1/2 cup of sugar. Soak for not less than 1/2 hour, not more than 8 hours.

With a vinegar honey mustard dressing. Or whatever; it's so good it really doesn't need much fancying up.

Edit: Oh, Tri-tip! Ha ha, I get it! No, I don't. What is it?
