Calling All DU cooks! Please help.
I help feed the homeless on Mondays, but this Monday they asked me to prepare the main dish for about 100 people.

This is what they gave me

10 extra lean pork tenderloins.

Onions.

Apple juice.

Apple Sauce.

I thought about braising the tenderloins in the apple sauce, but I just seem to be at a loss on what to do.

Any & all help will be greatly appreciated.

That's a tough one. Do you have any other requirements and what else will be served?

I'm thinking that the apple sauce would be a good side and the apple juice is probably best as a beverage although you could use some of it as the sweetener in a marinade/baste if you wanted to roast the pork. Add some potatoes or rice and a vegetable. (Cobbed corn is fairly cheap right now at 3-4 ears for $1 and since it has a fairly short shelf life and most grocers sell 90% of what they sell in a week over the weekend, you might even be able to find a late Monday afternoon donor among the grocery chains.) and you have the basis of a pretty nice roast-pork dinner, though the portions might be small on the pork.

No idea what to do with the onions though, possibly you could roast them separately from the pork with some butter. They get brown, soft and sweet when wrapped in foil and thrown in a 350'F oven for 20ish minutes.

Also on the menu Mashed potatoes, gravy mixed vegetables, bread & fruit salad.

You might use the onions in that

Dunno about the apple juice and sauce. There seem to be recipes online for stuff like this:

4. 10 porkchops is going to be a stretch for 100 people.
Are there a LOT of onions? I'm thinking shredding ala pulled pork, cooking a long time in the applejuice, sauteing LOTS of onions (can you get butter?) 'til they caramelize and smothering whatever meat you got with the onions and serving with very very cold applesauce on the side.

(note: I am not a cook)

7. Not pork chops, pork tenderloins.
I didn't think pork tenderloins could be used for pulled pork? I had only used Boston pork butt roasts for that. But then again I am up to learning something new.

I put it in the crockpot. Let me look around and see if there's an easy way to do that in the oven.

you will use the juice. You'll need bread crumbs but not much really. 1 box would probably do it. The sage you might have that at home and I wouldn't worry about the bacon but it would only take about 1 pound for all of them so it's not that much. Depending on how many onions you have, you could halve them and put them in around the roast.

Serve it with apple sauce. Easy easy and yummy. No potatoes? Nice pork tenderloin, it's a good meal for the homeless. They will love you for that.

18. This is what my husband came up with:
Take the onions and cut small, saute with some apple juice until caramelized, deglaze with more of the apple juice, reduce to a thick consistency and reserve. (you can add nutmeg, cinnamon, and cloves here if they are available)

Sear the tenderloins to lock in the juices and then put in the oven covered with the onions and some applesauce.

cook at 350 until 165 degrees internally, cut and serve.

you can serve more of the applesauce with the tenderloin as a side as well.

tenderloins are small and aren't going to provide much more than a taste if one is to serve 10 diners



A boneless pork loin is about five inches across.




The tenderloin is a much smaller cut of meat (usually about two-inches in diameter) from the loin.

and bake... I usually put a bit of brown sugar in it....

You could add applejuice and the onions instead of the brown sugar to sweeten it.

I shred the pork with forks and leave it mixed with the kraut and serve over mashed potatoes...
