6. Yes. Except it will not really be vegetable soup.
My wife is a vegitarian and I always have too look at labels to make sure some ostensibly vegetarian soup does not contain chicken or beef stock, which many do.
I've been making chicken soup from raw chickens for a while...but roast chicken carcasses make very nice soup, too. That good nourishment in the bones is still there... But vegetarians might have a problem with you calling it "vegetable" soup.
10. My opinion is that it would not be a very flavorful soup.
All the yummy stuff---chicken fat---that is needed for a good soup is gone. You will basically have some chicken pieces in water. But I have never tried it.
I live alone so also have problems with what to do with the rest of the rot-chicken. I always just take the rest of the chicken off the bone and make chicken tacos or chicken sandwiches in the next day or two.
