1. Two slices of sourdough bread
Extra sharp cheddar cheese sliced thin, grilled onions, slices of tomato and Dijon mustard.

Use a cast iron skillet and a little bit of butter and grill away.

10. Use 2 cast iron skillets
Spritz the outside of the sandwich with a little olive oil, put it between 2 preheated castiron frypains, wait 3 minutes, and you have a crispy crusted bit of perfection.

The innards are up to you, but please, no "pasteurized process cheese food," and GRATE watever cheese you choose.

2. If you can get your hands on "the government cheese"...
...get some. Makes the best grilled cheese ever!

The Boy Scout camp I used to work for back in high school received Commodity Foods from the USDA, so we got the government cheese, peanut butter and grape jelly. The PB&J are awesome, too.

14. We've made government cheese
Our government cheese is as good as the more expensive American cheese in the deli (but I feel obligated not to mention those brands on a public forum). The USDA is very demanding of quality and suprvises the whole process and does their own lab testing on it. Of course, the evil partner complained that our government contracted cheese was too good. He said that it didn't seem right.

6. There is a Brazilian type of sour cheese, sold grilled on a stick.
Coalho, it's called. Highly recommended. A stick goes for R$ 1 = US$ 35¢.

29. My neighborhood is largely Brazilian...
and there's a market across the street from me that sells vast amounts of imported cheeses, meats, and other goodies.

Many of the names escape me now, and the labels are all in Portuguese anyway, but lemme tell ya Brazilians eat GOOD!

I should make a mental note not to come in this place after 2:00.

Lovely ideas! I'm so bland and boring... white bread and colby cheddar is all I've ever done -- at least until now. Who knew to look for recipes for grilled cheese sandwiches? Not me.

but I'm stuck at work with no food and no money. I don't eat breakfast and lunch so by this time I'm ravenous!

Butter one side of each slice....And then two-four slices of cheese depending on taste. Put in the toaster oven on the toast feature. Flip, and hit toast again. Perfect.

Grilling the cheese itself. No bread involved. Gets all brown around the edges and the texture becomes more solid. Longhorn cheddar becomes wonderfully nutty.

17. White bread, velveeta, "I can't believe it's not butter"....
heat up your skillet with a touch of ICBINB; butter up the insides of the bread and put at least 2 slices of cheese in between. Stick em together and butter up the outside, crust to crust.

Lay in the hot pan for a moment, then flip it, THEN place your bacon press, other skillet or whatever you squish it with on top.

Flip it over ever minute or so until perfectly, deliciously browned golden, squashed thin as can be.

18. My husband makes the best grilled cheese sammidges!
bar none. He grates the cheese rather than slicing it, which makes it melt more uniformly. He lightly brushes both sides of sourdough bread with melted butter (you can add rosemary and garlic if you like), then sprinkles the bread with the grated Tillamook cheddar. It's fastest on the Foreman grill (because both sides grill at once), or you can do it on the electric griddle and flip it when the cheese melts.

We're not eating them these days, though - too much fat and we're avoiding non-wholegrain breads.

whatever cheese is handy...

and anything else I have around that's handy.

Chedders are kind of the standard, but a buttery cheese like a Gouda works well when in the mood. The Swisses are excellent, too. I have about a pound of Magdalen lying around, which is a mild French swiss sort of thing. Great for melting-- even better than real Emmenthaler.

Never tried a Brie, but what the hell...

Tomatoes are great if fresh and vine ripened, as is ham. Julienned, of course.

Mushrooms, olives... various herbs and spices...

Raspberries.

Olive oil inside, perhaps, but only butter on the outside.

Openface in the toaster oven or closed on the griddle.

I have one of those Grilled Cheese makers I got hears ago that also does a fair job of it. Makes little triangular pockets.

A long time ago, I had a round clamshell gadget with long handles that worked over a stove or grill flame. Best grilled cheese ever with that thing, but they don't make them any more. There are similar things out there, but nothing quite like that gadget.

The U.S. government is one of our pickier customers. They test multiple loaves and they all need to meet specifications. One of the specifications is melt and there is a way to measuer that quantitatively. If it doesn't melt nearly well enough, the entire day's production was in vain (although it would actually probably get relabled and sent to another customer). If it melts almost as well but not good enough, they pay the company a few cents per pound less for the cheese. This can really add up though and make the government contract barely worth it.
