1. My homemade tortillas are all lopsided and are so thick there is no way one could make a burrito
but they are good anyway with butter. wow I suddenly have a craving for tortillas.

When I'm hungry, I want to eat. I don't want to eat and get some heavy, precious, overworked vibe from some douche. He may know a lot about cooking. But so do I, so fuck him. I don't like this guy. He can stick his perpetual smirk up his smirking ASS. F-U-C-K him.

7. Alton Brown is a fucking God!
What's different about Alton Brown and practically all other cooking show hosts is he teaches WHY and not just HOW. He also covers food history which few others do. So he might be smug and he might be a geek, but he does things nobody else does.

8. The "why, not how" is why I watch his show
I've expanded my cooking and eating repertoire thanks to AB, not to mention I find him and the shows wildly entertaining.

And Alton will never get it right til he has spent at least 10 yrs making tortillas every day. My mother made enough dough for about 50 tortillas every day. We - the womens - would roll them out. Never had the urge to learn and now I regret it. There is no recipe - its just a scoop of this and whatnot. I've tried.

The best restaurant tortillas I have ever had is at a place called "Apetito's" in San Antonio. The lady who makes them is a Goddess. They melt in your mouth.

11. The best I've ever had came from across the border
When I lived in El Paso we used to go across the border to a Juarez restaurant. It was over 20 years ago and I don't remember the name, but they had a lady that worked there that did nothing but make tortillas. They were the absolute best. Near the old Mercado there was a tortilla factory that wasn't as good, but still tasty. You could buy a kilo of tortillas for 30 cents or so and they were hot off the machine.

I do like making them at home. They may not be perfect, but they are still much better than what you get at the grocery store.

I've never actually gone to one, but there is one brand easily
available in supermarkets, Alejandro's... that I've always thought
are what homemade tortillas would taste like.

If that assessment is true, it is VERY worthwhile making them
yourself (unless you have access to Alejandro's).

Only drawback (a plus in some folks' eyes) there seem to be
absolutely no preservatives, so they go moldy pretty quickly.

12. No preservatives
Tortillas are like any other bread. It should be dirt cheap, no preservatives, and consumed within a day or so. Tortillas should be made from nothing more than corn, water, and salt, just as bread should be made from nothing more than flour, water, salt, and yeast.

Unfortunately we live in a society where in many places the access to such things is only via large markets which get them from huge factories. In many countries you typically have a tortillaria or a bakery within walking distance and people visit them every day.

14. Making your own tortillas isn't hard, but
it is time consuming and I can never get them thin enough. Mine did fill me up though.
