Mine's kinda boring tonight..

Grilled lemon/pepper chicken, roasted broccoli, and spanish rice.

4. Homade Chicken a la King.
I grilled some chicken breasts marinated in White Barbecue Sauce.
They were T-U-F-F.
Miz t. says it was the chicken, not the marinade or grilling.
I dunno.

Anyway, we wanted to use them in a dish that would 'soften' them up and C. a la K. won.

10. Here's the White Barbecue Sauce recipe:
It may sound kinda gross, but it's damned good.

Big Bob Gibson Bar-B-Q White Sauce
Makes 4 cups

2 cups mayonnaise
1 cup distilled white vinegar
cup apple juice
2 teaspoons prepared horseradish
2 teaspoons ground black pepper
2 teaspoons fresh lemon juice
1 teaspoon salt
teaspoon cayenne pepper

In a large bowl, combine all ingredients and blend well. Use as a marinade, baste or dipping sauce.

Store refrigerated in an airtight container for up to two weeks.

16. ah. hope you feel better. when kids were little i did the chicken noodle. now
that they are older, they still insist on chicken noodle when they are sick. funnnnnny.

11. Avocado salad, Drunken Chicken with tequila and green olives .....

l/2 cup golden raisins
l/2 sherry, heated
l/2 cup flour
l/4 teaspoon each salt and freshly ground white pepper, or to taste
l small (about 3 l/2-pound) chicken, cut in 6 8 pieces
l/2 cup corn oil or other vegetable oil
l cup thinly sliced onion (l medium onion)
l/2 cup whole blanched almonds
l/2 cup whole pimiento-stuffed green olives
l l/2 cups chicken stock or water
l/3 l cup distilled white vinegar
l cup tequila
l tablespoon sugar
l tablespoon cornstarch
Instructions
Place raisins in a small bowl and pour hot sherry over them. Let sit at least 20 minutes to soften raisins.
Meanwhile, combine the flour, salt, and pepper in a flat plate or dish. Roll the chicken pieces in the flour to coat evenly
In a large skillet, heat oil over medium heat until not quite smoking. Fry chicken pieces until well browned on outside but not cooked within, about ten minutes. (Work with two skillets if you dont have one big enough to hold all pieces comfortably.) Place browned chicken in baking dish or Dutch oven with a tight-fitting lid. Set aside while you make the sauce.
Discard all but about 2 tablespoons of fat from skillet. Add onion and garlic. Saute on medium heat, scraping pan to dislodge any browned bits of chicken, until onion is golden and translucent, 3 4 minutes. Add almonds and cook for another 2 minutes. Add olives and plumped raisins with any unabsorbed sherry; cook another 2 minutes.
Preheat oven to 350.
In small bowl, dissolve cornstarch in about l/4 cup of the chicken stock.
Add the rest of the chicken stock to the skillet along with the tequila and bring to a simmer over medium heat. Add l/3 cup vinegar to the mixture and taste. Continue to add vinegar (up to l cup in all) until desired tartness is achieved. Stir in the cornstarch mixture. Let it boil, then reduce heat to low and simmer until sauce thickens and flavors meld, about ten minutes.
Pour sauce over chicken. Cover the baking dish and bake about 20 minutes, or until chicken is tender but not overcooked. Serves 4.

45. That rcpt is from Zarella Martinez's cook book...
I used to eat at her restaurant back in the day. Drunken chicken was my favorite dish and I have owned the cook book for decades now. I was so happy to find it online so I didn't have to type the whole thing out! Once you try it I think you make it a staple. It makes great comfort food on a rainy night or it good for a dinner party too.

I usually use catfish, but they were out at the fishmonger's. I forgot to pick up jalapenos, so I'm using sriracha. It works nicely. I also subbed shallots for onions. Using grapefruit juice and zest with lime juice and zest.

41. Homemade sauce with pasta and salad
Not sure what to call the sauce. It had bacon, onion, garlic, mushrooms, sour cream, white wine, nutmeg, pepper and a dash of Worcestershire. It started intending to be the filling for a mushroom pie recipe from AllRecipes.com, but we decided that we wanted pasta so I added extra sour cream and the white wine. It turned out good.

46. Mine was more boring
I had 2 salmon sandwiches on the train from Paris to Brussels and two tiny salmon filets
in the hotel lounge here in Brussels, with a tiny cucumber salad and hot herbal tea to drink.

I'll be back in Germany tomorrow and try to do better.
