Sushi lovers rejoice!
I just found out that one of my local fish stores has frozen Saku tuna, the rectangular blocks of tuna that are used for making nigiri and other delights like my favorite, Tuna Tataki.

Take a block of the tuna, defrost it, dry it, coat it with pepper on all sides (not the ends), a bit of kosher salt if desired and sesame seeds. Get your pan screaming hot and sear it on all sides (again, not the ends). Cool it, slice it, serve it with a bit of soy, wasabi, and pickled ginger and I'm in heaven.

Now I can do it at home, and spend far, far less than even the cheapest Japanese restaurant around. I'm a happy camper, and noshing on some right now.

1. I know a couple that are experts at sushi
and there is a pacific type store really close to where they live. They make a combo of 3-4 types of sushi and have the dishware to serve it.

I am not suppose to eat sushi but it's sooooooo good, I take my chances.

2. I'll be playing more with this over the next few weeks
The tataki was wonderful, and I have all of the supplies to make my own rolls, so that's next on my list.

5. I made some nigiri today, tomorrow it will be a spicy tuna salad

3. I absolutely love sushi
But unfortunately, some of the most delicious fish (the large, predatory ones) are rapidly disappearing from our oceans. The current rate of consumption around the world is not sustainable in the long term and high demand for sushi (particularly among the rising Chinese middle class) is pushing along this process. I still eat it, but I feel more and more guilty each time.
