1. My wife prefers
chicken alfredo, or shrimp alfredo linguine. Of course it comes with garlic bread, and a blue cheese/salad.

5. ok my vote is for the chicken alfredo
since you don't like handling/have shellfish allergy, i vote for the chicken, and anyway i happen to think chicken alfredo sauce is much better than shrimp -- and i v. much like shrimp but it just seems better to prepare something you can BOTH enjoy

i also like the fact that IMHO you can serve chicken alfredo w. pretty much any wine you like, be it champagne, be it pinor noir, white or red, sparkling or still, it just seems to go w. whatever you like

use the best blue cheese you can get your grubby hands on :-) i'm a fan of maytag -- i like to have some with pear (even canned pear might work if that's all you can get that's soft enough) and walnuts on the salad -- raspberry viniagrette or balsamic viniagrette dressing would be fantastic

make a chocolate mousse for dessert

wouldn't object to a snifter of johnny walker blue afterwards but to keep things more reasonably priced, a nice cognac glass of frangelico liqueur might be nice

enjoy!!!!! now i have to plan my valentine's day feast, it's tougher because it has to be low carb...

2. What does she like?
Make what she likes. I think she'll like the fact that you thought of her and what she likes.

3. She eats all kinds of food
I am more of a meat and potatoes kind of guy. She likes shellfish a lot (i'm allergic). I don't like cooking fish at home (smelly). Other than that everything is on the table.

4. A shitake omlette with fresh steamed asparagus and crumbled gorgonzola.
That's what I'm leaning toward.

9. Got this from a tv cooking show:
Delmonico steak (it's a ribeye w/bone in I believe)
Smashed taters w/horseradish and bacon
Tomato stuffed w/creamed spinach and blue cheese (melted under broiler).
Wine
Dessert of your choice, I prefer ice cream with a heavy meal like this.
