to make TAMALES!:9




these are from last year - about to go put together this year's; meat is done, husks are soaking, just need to mix up the masa (yes real lard)

I'm making tamales next week -- two stuffings: poblano & cheese and a Panamanian meat version with capers.

I make two big pots worth and freeze most of them.

5. oooo what is the flavoring for Panamanian meat?
normally I freeze them and give most as x-mas gifts, but they are for the immediate family this time! We never get enough. These are regular red chili pork (it was cheaper than beef when I went to get a hunk-o-meat this time. I prefer beef but hey budgets. Should get at least 4 dozen. Might make more next week too. We'll see.

they're wrapped in banana leaf instead of corn husk. There's a vendor at the local farmers market who sells them and I'm trying to fake them at home, complete with banana leaf.

eta: the meat is chicken traditionally,in chunks.

Wood fire tomorrow. Since the oven is unreliable and I declared no holiday (but of course have to do it anyway because I am defective that way) instead of a roast we are going to go find a warm hollow and cook some steaks out "on the range" somewhere.
