Boneless chicken breast, tenderized, layered with thinly sliced ham and Monterey Jack cheese, rolled up, dipped in melted butter, rolled in Italian seasnoned bread crumbs, baked at 375 for 35 minutes. Ymmmmmmmm

20. Yes - the best way, but too fattening. 8-(
Cut it into portions, soak overnight in buttermilk, season (with salt, pepper, paprika {smoked is best} and whatever else you like), dredge in flour, then in egg, then in four again. let it sit for a few minutes while you heat about half an inch of shortening melt and get up to 350F. Brown one side to golden brown, turn and brown the other side. It should be done by the time the coating is perfectly brown. If not, bake for a few minutes at 350 F in the oven until it is done all the way.

16. It is a butchering / cooking technique.
Basically, you split the fowl up the middle along the back / breastbone. This allows you to lay the entire bird out flat. Cooks much faster, and more evenly. Looks like a squashed toad, when done this way. Anyway, if you want to grill, broil, or bbq an entire bird, get it done pretty evenly and much more quickly, spatchcock it. Google the term; I'm sure instructions are out there. Takes longer to read about it than it takes to do it.

25. For frying? Just flour. For something different:
Cut up a fryer the way you prefer. Take 2 sweet potatoes and cut into French fry size. Take 2 red onions and cut into rings. Toss all with EVOO to coat, salt and pepper. Put on cookie sheet and bake at 425 for 40-45 minutes. Very tasty.

Red or green enchilada sauce.

Bake it in the oven for a couple of hours, until the meat is about to fall off the bone.

Serve it with rice.
