FYI: Betty Crocker came out with Gluten-free cake/brownie/cookie mixes!
Pardon if you already knew this; but I didn't until my local grocer started carrying them. This makes it very easy for me to try getting the family on some gluten-free foodstuffs. Next I need to learn to make gluten-free whole-grain bread for sammiches..

Still haven't made them. It calls for eggs and I'm looking for a suitable substitute. I'm not sure if applesauce or that powdered egg substitute would be better.

Another source for gluten free noms is a recipe book Babycakes by Erin McKenna. It has some ingredients that are hard to come by if you don't have a natural food store near by. It's also vegan and mostly sugar-free (if that matters).

My MIL is gluten intolerant, so we're always looking for gluten free recipes/mixes. They seem to be getting better as the demand for them grows.

I remember looking up a recipe for gluten free muffins the first time my MIL was coming to visit. This would have been mid 90s. I printed and followed the recipe exactly. I remember pouring the batter into the muffin tins, foolishly leaving room for them to rise.

They were awful! They didn't rise at all, and while the flavor wasn't bad, the consistency was terrible. Sort of like edible hockey pucks.

My MIL was a sport. She ate them AND raved about them. How she could stomach them is beyond me.
