2. On their own, yes. However, when sweetened and made into borsht, it's actually pretty tasty.
My mother and my grandmother made great beet borscht. The best was at Christmas when they would add the woshki (mini periogi) in.

4. I love borscht, mmmm with a nice slice of light rye.
There is a restaurant north of here that has the best borscht. They serve all sorts of eastern European food. http://pomegranat.net/Menu.html

then saute the beets in butter with black pepper and a dollop of orange marmalade. Fabulous.

Throw some fresh whole beets in a roasting pan with a few shallots and olive oil, cook for an hour or so. The peel should slide right off the beets. Chop up the beets and shallots, throw in some balsamic vinegar and a little oil, toss with fresh parsley and freshly ground pepper and sea salt. Devine!

26. I had a serious beet addiction going last year.
Striped beets, pulled fresh from the garden, roasted in the oven with olive oil and salt. To die for. I started to feel guilty for wanting to eat them in place of real dinner each night.

I still have no desire ever to buy one from the grocery store, they look horribly unappealing there and I imagine they taste like rocks. But homegrown, mmmmmmmm.

28. Beet Brulee
Puree some roasted beets and combine with eggs, cream, and mascarapone (or even a good blue cheese). Bake in a water bath then caramelize a layer of sugar on top with your blow torch. Yummers.

my daughter LOVES them, especially pickled. She planted a LOT of beets in her community garden plot and plans to pickle some herself this year.
