What's everyone having for Easter dinner? Post yours here...
We're having stuffed portabello mushroom caps (spinach and feta stuffing) and then apple pie with black cherry chocolate ice cream.

5. Lasagna, broccoli salad, garlic bread. chocolate eclair dessert.
We had our Easter celebration at our son's home yesterday with the ham/kielbasa and fixings.

DH has been wanting lasagna so today was a good day to fix it.

6. I'm making fresh raspberry/blackberry cobbler. And yes, that might be all I eat for dinner.
I made a ham this morning, but nobody has eaten it yet, and a traditional dinner today isn't high on my priority list.

Some kind of potato, I think...

And a tossed green salad.

I have to order the salmon steaks, since my meat market normally filets all of it.

Wild salmon; what a treat!

8. Bean dip!!!
Here's the recipe:

IN a nine inch round casserole glass casserole dish: Layer the following ingredients:

3/4 can of refried beans
A pound of cooked hamburger or ground turkey simmered in taco seasoning
About a cup of salsa, or a little more to cover said meat
Two cups of any shredded cheese ( more or less)
One pint of sour cream
Garnish with chopped red onions and black olives

Cook 30 minutes in 350 oven

Serve with Scoop tortilla chips: I have adjusted this recipe so many times to our tastes, use more beans if you like, less cheese etc. We served this at an Obama inauguration party and it was the rave!!!

Salad, rolls, ravioli, meatballs and sausage, two kinds of broccoli (one with, and one without cheese), potatoes, corn, wine, beer and other alcoholic beverages. All kinds of apps. and desserts. We had too much food, but it was so good. :bounce:

11. We got the ham, mustard mold*, and the dining table.
I have no idea what our friends are bringing.

*Mustard mold:
4 EGGS
1/1/2 TPS DRY MUSTARD
¼ CUP WATER
1 ENVELOPE KNOX GELATIN
¾ CUP SUGAR
¼ TSP SALT
½ CUP CIDER VINEGAR
½ PINT WHIPPING CREAM
Mix the sugar with the gelatin that has been soaked in the ¼ cup of water, add the mustard and salt.
Beat eggs in the double boiler then add the mustard mixture. Cook over double boiler until the custard coats the back of a spoon. Cool
Whip cream then fold in the cooled mustard mixture.
Chill until set.
Goes great with ham!

potatoes mashed, green beans and a tossed salad.

I baked Artisan bread, cinnamon bread, lemon meringue pie and 4 dozen oatmeal cookies!

I think that's enough for the two of us :)

baked sweet potatoes with honey-cinnamon butter, and candied carrots and parsnips. Plenty of leftovers, so there will be lots of soup and ham sandwiches coming up.

There's ham (don't indulge in that myself) egg casserole (ok if you pick out the pork products), and my favorite: spinach, mushroom and carrot crepes and the fresh fruit salad :)
