Today I am making carnitas. For those Mexican food challenged - it means "little meat" in spanish. Typically it is a pork shoulder which is seasoned and slow cooked until it caramelizes on the outside and shreds into soft, wonderful yummy deliciousness -
I will also be making homemade (not canned) refried beans and a spicy mexican rice along with sliced tomatoes and avocados with lime wedges... Naturally hand made flour tortillas are a must.
mexican oregano and lots of garlic... yes. The house will smell so good that the neighbors will be over.... (really.) It also helps that I make a really good handmade margarita on the rocks.
