MrScorpio's Apple Coffee Cake

1/2 cup butter or margarine, softened
2 cups granulated sugar
4 eggs
2 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
5 cups peeled and chopped apples
1 teaspoon vanilla extract
1 1/2 tablespoons granulated sugar
1/2 teaspoon ground cinnamon

Beat butter at medium speed of electric mixer. Gradually add sugar; beat well. Add eggs, one at a time, beating after each addition.

Combine flour, baking powder and salt; add to creamed mixture. Stir in apple and vanilla extract. Spoon batter into a greased and floured 13 x 9-inch pan.

Combine sugar and ground cinnamon; sprinkle over cake batter. Bake at 350 degrees F for 45 minutes or until a wooden pick inserted in center comes out clean.

7. Something called Swedish Cakes.
A buttery cookie rolled in crushed pecans, with a dab of jam in the center. I'm too lazy to explain it further but you know what I mean. What are Heidi's orange cookies?

Here ya go! These are very, very easy -- and a hit every time I make them. :hug:

Exquisite Orange Cookies
Makes about 4 dozen small cookies

(Preheat oven to 325 F)

Ingredients
- 1 Cup butter, softened at room temperature (2 sticks)
- 1-1/2 cups sifted powdered sugar (you can use normal white sugar)
- 2 Cups of white flour
-1 teaspoon vanilla
-3 Tablespoons grated orange rind (use the finest section of your grater or buy the pre-grated orange zest in the grocery store. Fresh is juicier, though, and less bitter.)
- 1 egg, unbeaten
- 1 teaspoon baking soda
- 1 teaspoon cream of tartar

Directions
1. Use your mixer to cream the butter and sugar until light and fluffy.
2. Add your vanilla, orange rind and egg. Mix well.
3. Add the sifted dry ingredients (flour, baking soda, cream of tartar)
4. Scoop the dough up by small teaspoonsful and drop onto un-greased cookie sheet (I line the cookie sheet with baking paper; makes cleanup easier). OR, scoop by small teaspoonsful and roll into ball with your hands and place on cookie sheet. Sometimes it helps to refrigerate the dough for about 20 minutes or so.
5. Bake for 7-9 minutes, or until golden brown on the bottom.
6. Cool, then sprinkle with powdered sugar.

NOTE: If you want to add a little variety since these cookies are very "plain-looking," you can melt some white chocolate in the microwave, and dip half of each cookie into white chocolate. Yummy and very pretty. Sometimes, I dip half the cookies in white chocolate, and half the cookies in dark chocolate -- but normally I just serve them plain, since we don't have a microwave and I'm usually too lazy to melt chocolate in a double-boiler.

Those look excellent and I'm going to buy some oranges today so I can make them. I like my Christmas cookies to look simple and homemade so I don't think I'll adulterate yours with any chocolate this time around, though it does sound good. How are you? Is all well?

VIENNESE CRESCENTS

COOKIE DOUGH:

2 c. unsifted all-purpose flour
1 c. butter or reg. butter, softened
1 c. ground unblanched almonds or hazelnuts
1/2 c. sifted confectioners' sugar
1/8 tsp. salt
1 tsp. vanilla extract
1/4 tsp. almond extract

VANILLA SUGAR:

2 c. sifted confectioners' sugar
1 vanilla bean

Make Cookie Dough: In large bowl, combine flour, butter, nuts, 1/2 cup sugar, salt and extracts. With hands, mix until thoroughly blended; shape into ball. Refrigerate, covered, 1 hour.

Meanwhile, make Vanilla Sugar: Place sugar in bowl or small container. With sharp, pointed knife, split vanilla bean lengthwise. Scrape out seeds; mix seeds into sugar. Cut pod into 2 inch pieces; mix into sugar.

Preheat oven to 375 degrees.

Shape cookies: Form dough into 1 inch balls. With palms of hands roll each ball into 3 inch long roll.

Place rolls, 2 inches apart, on ungreased cookie sheets; curve to make crescents. Bake 10 to 12 minutes or until set but not brown.

Let stand 1 minute; remove from cookie sheets. With spatula, place hot cookies on large sheet of foil. Sprinkle with vanilla sugar; turn gently to coat both sides. Cool. Store in airtight container.

Just before serving, coat with more vanilla sugar, if desired. Makes about 4 dozen.

16. Those multi-layered "magic bars"!
The ones with the coconut, chocolate chips, graham cracker crust, walnuts and whatever else all layered and then baked in the oven.

Second choice would have to be those flat, frosted buttery cookies that always look like trees, snowmen, angels, etc....

I had a buddy in high school who would distribute 1 pound bags of butter cookies to everyone in our science classes together. Why science classes? Search me, but there's nothing better than eating buttercookies to the smell of chemical fumes.

Family recipe that's been around for over a century. Takes a whole day to make a batch b/c there is so much...but MAN are they good.

A really versatile recipe you can use for cut out cookies, snickerdoodles, press cookies, thumbprint cookies...etc. They sky is the limit. Not really a sugar cookie, but not really a shortbread cookie either.

The recipe I have was copied in 1929 by my great grandmother.

25. Tie between peanut butter cup cookies and thumbprint jam cookies
Peanut butter cup cookies are SOOOO easy to make. You just make normal peanut butter cookie dough, roll it into 1-inch balls, put the balls into a mini-muffin tin, and bake them. When they're done, take them out of the oven and quickly press a whole miniature peanut butter cup into the center--the cookie part will rise up around it on the sides as you press. Then you let them cool. Sooooo good.

Thumbprint cookies are awesome, too. The dough is rolled in chopped walnuts, then you press a thumb into the center and fill it with fruit jam before baking--I use strawberry, peach, and raspberry. You can also fill the center with other stuff--bits of chocolate candy bar, lemon/lime curd, peppermint bark...the peppermint bark is ESPECIALLY good.

I do our family's holiday baking and candy-making, and these two cookies are always a huge hit. Recipes available to those who want them, as well as my recipes for perfect fudge and chocolate-covered peanut butter balls.

My recipe: Use the one on the back of the Kraft Marshmallow Creme jar.

Except, do this:

1) Put in 1/2 or 1/3 as much chocolate. Put in 6 ounces of chocolate chips instead of 12 oz.

2) Put in twice as many nuts as it says.

Sugary peanut butter cookies with the Hershey Kisses on top! yum. Only now my kids eat all the kisses off the tops and leave me the stumps. The stumps are still pretty good.

34. Orange Balls.
My grandmother used to make them. It involves a can of concentrated orange juice rolled into a ball with confectioner's sugar then rolled in coconut. Damn, those were the best cookies. Or would they classify as cookies?

In the for sure cookie category: It comes in a tube in the freezer section. Pillsbury chocolate chip cookie dough. The part of the dough that makes it onto the cookie sheet for baking bakes into nice tasting cookies. I get those when I can afford a little treat.

I wish I could still make them. But now that my hands don't work I can't knead or roll out the dough. :(

I was in the middle of baking Christmas cookies for DUers two years ago when I realized that I was having problems with my hands.

I am going to have to get some friends to bake some of these for me. :9

44. oh you need Chocolate Shadows. My daughter loves these.
Basically it is a good peanut butter cookie, with melted chocolate chips marbled through the cookie dough. You put peppermint extract in the chocolate also.

I have misplaced the recipe temporarily but will bookmark this so I can get back to you with it, if you want it.

49. CHOCOLATE SHADOW COOKIE RECIPE

OVEN TEMP: 375 degrees This will yield about 42 to 48 cookies.

1/2 cup semi sweet chocolate pieces
1/8 to 1/4 tsp peppermint extract
1/14 cups all purpose flour
3/4 teaspoon soda
1/2 teaspoon salt
1/2 cup sugar
1/2 cup firmly packed brown sugar
1/2 cup butter, margarine or shortening. (butter is better, of course) (at room temp)
1/2 cup peanut butter ( I use extra chunky, personal preference)(at room temp)
1 egg



Melt the chocolate chips ( I use the microwave, personally) Stir in the peppermint extract and set aside to cool.

Combine everything else into a large mixing bowl and blend well with mixer.

Add melted chocolate and stir just to marble.

Shape into balls, place on ungreased cookie sheets, flatten with bottom of glass which has been greased and dipped in sugar.

Bake 8 to 10 minutes. Cool.

**reduce soda to 1/2 teaspoon if altitude is over 5200 feet**

I use a mini ice cream scoop to shape the cookies, saves time. I also found out if you end up overblending the melted chocolate into the main dough, they still taste excellent.

I already have a request from my daughter to make these when she is visiting me for the holidays.

I have a butter pecan cookie that is very good and of course good ole Toll House, Snickerdoodle, Chocolate Snickerdoodles, Chocolate Shadows, and brownies.
