It's Homemade Pizza night here! :woohoo:

Let's see tonight it will be: Green Pepper, Onion, Bacon, Mozzarella and Fresh Grated Parmesan, on a base of Pizza Sauce and Pesto. :9

30. Diced tomatoes, diced onions, minced garlic, oregano, dill
salt and pepper. Cut the eggplant into 1.5" slices and make a pocket by slicing into each slice part of the way. Stuff with the mixture, place in a 13x9" baking dish, brush each pocket with some olive oil and sprinkle more oregano, dill, salt and pepper on top of each slice.

Cover with foil and bake at 375 F. for 45 minutes. :hi:

Hey, did you know I'm back in school again, after 22 yrs? Yup, mama's hittin' the books again. I'm goin' for a 2 yr Master's program in Counseling Psychology....hence the convenience factor of dinner is important on school days. :D

After all these years, it's weird to be back in academia again and doing a f/t load, but my kids are older now, (12 and 15) so it's a good time.

I'm also really lucky I don't have to work outside the home while I'm doing this program.

Are you in a grad program, too? Sorry, I can't recall....

I'm doing my Senior Honors Thesis in Econ, graduate in May, take a year off, and then straight into a PhD program, most likely in Public Policy or Urban/Regional Planning.

I am a dilettante Urban/Regional Planner. And I can prove it: look at the archives of any of several boards related to NOLA rebuilding from that fateful fall of '05 through about mid-'06.

P.S. Despite the name, I am a New Englander (so. Conn., anyway) by nature, so that wouldn't be a dealbreaker.

P.P.S. Spaghetti sauce based on the late P. Loquesto Newman's Sockarooni, with ground beef, onion and Tabasco (I mentioned NOLA, right?) over elbow macaroni (ubiquitous out here because of mac salad :puke: and easier to handle than spaghetti in my undersized pot).

45. Works for me. In fact, there's some synergy there.
A group from MIT is involved in NOLA, specifically with a "Main Street" plan for Broad St. in Mid-City. Broad, like much of the city outside Uptown and the French Quarter, had seen better days even before the Federal Flood -- and it is several feet below sea level. :( Looks like they're headed downtown to St. Claude Ave. next year:

This practicum explores how economic and physical development interventions can be integrated to reinforce commercial district revitalization while providing students an opportunity to apply these approaches and other planning skills to formulate a neighborhood commercial revitalization plan for a client business district. The spring 2009 class will work with the St. Claude Main Streets program in New Orleans.


Doesn't get much better than that -- an MIT degree, and field work in the 'World's Most Interesting City"!

but with my Thesis, it isn't really feasible at the moment. But, I do have a year off between graduation and Grad school, so...

I'd love to get down there and help.

52. Baked Salmon with long grain rice and veggie pilaf.
Salmon was baked with butter, garlic, and other Italian herbs, and the rice pilaf was chock full of veggies--including 'shrooms, zucchini, onions, peas and carrots along with garlic and parmesan.

Made so much we had leftovers so it will be a lunch tomorrow too.

56. Meatloaf - mix of ground Lamb, Beef, Sweet Italian Sausage
The sausage is made by the local neighborhood grocery store butcher using an aunt's recepie from the pork leavings after he breaks down the pig from the local rancher's slaughterhouse. Mix equal amounts of meat, add salt, pepper, sage, cumin garlic, egg and sourdough breadcrumbs and two tablespoons horseradish. Roll out meat, fill one side with minced sweet onion, asparagus (or broccoli) mushrooms, and tomatos, then roll meat around veggies, pressing the veggies down in the meat so you get a nice "log" design with meat around. wrap in foil, place in roasting pan with top slightly vented so you can pull it apart.

Bake for one hour at 400, peel back top, sprinkle with grated parmesan, then bake 20 more minutes at 300 for a nice crispy outside. Take out of pan to rest for 10 minutes, leaving the juices in the bottom of the pan to make gravy during the resting time if you want.

Makes wonderful sandwiches.
