I'm going to N'Awlins and I can't wait to eat
I want to be drunk on cajun creole food

I want Jambalaya to embed every inch of my body so I smell like a walking celery stick

I want faucets with three settings: Hot, Cold and Gumbo

For once, I don't give a rats ass about the beer - I want Cajun Food

I want so much Cayenne Pepper my tongue is numb

Bring it on!!!

Regional powerhouse Abita has all kinds of seasonal offerings that should be to your liking (and are designed to go with the food).

Also, local classic Dixie, seemingly kayoed by the Federal Flood, has been resurrected by an Abita alum who is craft-brewing it in batches small enough that you'll have to poke around (old-line non-touristy joints are your best bet).

And may I say, the above post could have come straight out of the great NOLA blogosphere! :yourock:

Dixie's Blackened Voodoo is pretty tasty too!

I sure do miss the NOLA. I could go for a trip to Acme OB and catch a show at Tipitina's right about now.

5. Don't think the Blackened Voodoo came back from the dead
the Dixie Brewery on Tulane Ave. took about eight feet of water and has not reopened. The guy presently making Dixie is, like Abita, over on the North Shore. There is hope, though: the one-of-a-kind cypress barrels Dixie used for aging were on an upper floor and did not go in the drink, so to speak.

On the other hand, Abita did just come out with an IPA (without access to which Taverner would have had to cancel the entire trip :-) )

3. Well Cajun food is one of the best
French meets Spanish meets Southern

What's not to like?

Jambalaya is Paella with Cayenne and tomatoes

Gumbo is warmed Gazpacho...

I love it ALL!!!!!

Everyone tells me NOLA is a place to drink, but my place to drink will always be San Diego because of all the great beers there. NOLA is a place to EAT!

And ya know what, I've never been there...and I love Cajun Creole Cuisine!

I lived there for a time back in the early 90's and I dream of getting back there someday.

New Orleans and Austin, TX are two of my favorite places to be!

And we've been eating our way through the city ever since. We're thinking of setting up our own database of places we want to try, so that we can search by neighborhood, cuisine, expense.

11. I always wanted one of those meals where they wrap a picnick table
in plastic, and throw huge vats of crawdads downn them and you dig in. Is that a NO thing? Not sure....

13. A crawfish boil is a South Louisiana thing in general
alas, prime "mudbug" season is April and May, so our friend is basically SOL (some restaurants serve facsimiles of them year-round, but, well, you know...)
