What's for lunch?
It's a beautiful, almost spring-like day here, and I decided to make a 'special lunch' for Paddy. We're having Cuban egg casserole:

6 8" flour tortillas
12 eggs
1/2 cup cream
2 cups shredded Monterey Jack cheese
1/4 cup diced red Bell pepper
4 oz. diced green chiles, drained
1 cup sliced fresh mushrooms
1/2 cup green Bell pepper strips
1 10 oz. can enchilada sauce, mild, medium or hot (your choice)

Pre-heat oven to 350. Line a 9" x 13" Pyrex baking dish with the tortillas, overlapping the edges and covering sides of baking dish. In a bowl, beat eggs and cream well, then add shredded cheese, red pepper and chiles. Pour mixture slowly into baking dish and bake 30-35 minutes, until done.

Sautee mushrooms and green pepper strips in small amount of oil, until tender, then add enchilada sauce and heat thoroughly. Serve over the egg casserole.

We're having lime rice and black beans with ours, and a green salad.

Heres something to try - dont laugh at it - its a real recipe from Brazil which has a wonderful cuisine.
Take a can of condensed milk, place in pot of boiling water and allow to boil for hour or two or you can put it in pressure with as much water as possible. When its ready, open can and slurp away, or line a cake with it or sprinkle coconut on it.

3. damn, that sounds good!
And I thought I was being gourmet for taking my kids' usual tuna and putting some cheese on top and sticking it under the broiler for a few minutes. :shrug:

Seems I can't eat anything off of a flimsy plastic fork without feeding my boobs. :eyes:
