Why do leftover fries taste so bad?
What is it that happens to them that makes them inedible? Whatever it is I wish it didn't happen.

1. If you reheat them in the oven, they sometimes are edible
If you nuke them, they just disgusting. I think it has more to do with texture, than anything else.

2. Well, fried stuff in general doesn't keep well. It's the oil; oil doesn't take well to

That's just my theory based on how bad they taste cold. I have no science to back it up.

5. the only way to really revive them is through refrying.
I used to work at a place that made famous hand-cut french fries. We actually fried them twice: once very quickly to "shock" them, and then later fried them to crispy perfection as they were ordered. But yeah, in the oven is the second best.
