I made onion rings tonight, and they were AMAZING!!

I made onion rings tonight, and they were AMAZING!!
I'd never made them before, but I accidentally landed on Rachel Ray today and she was making them. It was easy - just soak the sliced sweet onion in buttermilk for 20 minutes or so....then dip them in a mixture of equal parts flour and corn meal with paprika, salt and pepper. Drop the onion rings in hot canola oil until they start to brown a little.

I served them with a dip I made with sour cream and fresh spinach blended with some sea salt and pepper.

YUMMO indeed!

I've always wondered why they're so fucking expensive in restaurants, though - they generally cost way more than a similar order of french fries, and yet the fries probably actually have more capital investment in them than the onion rings.

And omg Rabrrrrrr - the dipping sauce I made was so simple and so amazing. I had some leftover baby spinach from the pie I was making for the main course, so I just threw it into the blender with some sour cream, some sea salt and telicherry pepper. So good. Yum yum yum.

I was laughing as I thought about all the DU threads.

I didn't have any dill, so I used spinach instead. It was GOOD!
