In a seasoning mix, rice of some roni thing and corn. Plain corn :)

Dessert is Edy's Vanilla Sandwich ice cream and some nutter butters, just because it's been to long.

The stress made it come a *week* early. :o

That hasn't happened since I was a teenager.... :crazy:

I'm not sure...probably spinach, feta, garlic, steak...But, we may try this new place who has a pesto-base pizza. :9

Keep in mind, I really like white rice.


Took some marinaded garlic chicken, sliced, and 3 slices of bacon and cooked them in the marinade sauce at low temp with the pan covered. When rice was close to done, remove cover and crank up heat to sear the chicken and bacon until fully reduced. Add some salt and white pepper then a 'tiny' bit of yellow mustard. Put chicken and bacon over rice. Eat.

34. I have to eat up all the leftovers & fresh veggies before I leave.
I think tonight I'll be using up the potatoes, the open container of soymilk and the seitan, either as country fried seitan or as shepherd's pie. Probably the latter, I also have carrots, mushrooms and onions to use up, and I can throw it in the freezer if I wind up with too much.

46. The cafe that opened in my neighborhood
had vegan lasagna as a special today.

The woman who opened this cafe specializes in food for special diets. She always has vegan, gluten free, corn free, and wheat free items on the menu. If anyone has a special need for food that isn't on the menu she'll take requests.

How cool is that? :)

I haven't had lasagna in quite a long time. It was wonderful! Hellen (the owner) even brought out a package of the cheese to show me just to make sure I was comfortable that it was vegan cheese.

I made a black bean salsa, fresh quac, and some tortilla pinwheels with seasoned cream cheese, fresh red pepper, shallots, green and black olives. It was very nice and light. :hi:
