How not to make lemon pudding
Tonight I got a craving for lemon pudding, so off to the kitchen I went.

I like the recipe off the back of the corn starch box--1/4 cup cornstarch plus 1 cup sugar in 1-1/2 cups water; cook to boiling while stirring the hell out of it; add three egg yolks and boil for a minute. Pull off heat, add 2 tablespoons butter and 1/4 cup lemon juice. Easy.

Lemon pudding is normally used to make lemon meringue pie, so you normally separate the eggs. Tonight I didn't want to make a crust, so I put three whole eggs in the pudding.

And now I have a bowl of lemon pudding with little bits of cooked egg white all through it. Tastes good; mouth feel is a bit weird, like that "Orbitz" soda must have been.
