Saffron, Artichoke Heart, and Leek Risotto - what do you think?
I'm seriously running out of food in the house, but I have those things - as well some veggie broth and chicken broth, but I think I would use veggie broth for this risotto.

Do you think it would work? Or should I leave the saffron out?

1. I'd go light on the saffron, and use the Veggie broth

Dunno, maybe a touch of sweet vermouth or a parmesan garnish?

3. Yeah - I'm thinking the saffron and the artichokes won't go well together.
In the sense that the chokes will totally obliterate the saffron.

4. Especially if they're canned chokes.
Plus, saffron is a pretty expensive back note.

I'm in a saffron mood... I love saffron. Yummy!

Maybe use some fresh peas instead of chokes.

Peas and saffron go well together.
