Fresh off a heady victory in the Oscars of the cheese world, Wisconsin cheesemaker Sid Cook was asked about the battle between America’s Dairyland and California, the state that claims happy cows.

“It’s about quality, not quantity,” said Cook, master cheesemaker-owner of Carr Valley Cheese in La Valle, who won Best of Show honors in last week’s American Cheese Society competition for his fruity, cave-aged Snow White Goat Cheddar. The competition in Chicago drew 1,149 entries from America and Canada.

Wisconsin cheesemakers captured 91 ribbons, more than any other state. California received 46.

Yet, equally important for the health of the state dairy industry, Wisconsin remains No. 1 in overall cheese production.

I believe that Land O' Lakes is from there...

And it's yummy!

We love the Monterey Jack and the very sharp cheddar!

though. I am a fan of Dubliner cheese, not made here or in Wisconsin but produced in Ireland.

11. Is Dubiliner a Kerrygold-produced cheese?
If it's what I'm thinking of, it's quite pleasant. Current favorite (on the off occasion I eat cheese): Beemster Graskass, an early spring cheese that's incredibly creamy. It's also not from California or Wisconsin.

24. have you ever had Kerrygold butter?
I know it's heretical for a Wisconsinite to say this but that butter so amazingly superior to anything that comes out of a cow here. Expensive but for a treat it's worth it for the amazing flavor.

17. They're good if you can get the good ones.
I don't like the rubbery white ones from a cheese factory. The ones that are yellow, like Cheddar, are great stuff.

16. Those cheese curds are great - and not available in California!
Or very rarely at least. I have only seen cheese curds for sale in one place in California, in a tiny little overpriced store somewhere in the central valley. They should be sold everywhere. I bought some at Central Wisconsin Airport, when I was waiting for a plane, and fell in love with them. I don't mean the rubbery white ones you can buy directly from a cheese factory - I mean the orange ones just like chunks of Cheddar cheese, but in odd shapes. Yum!

39. Dairy Farmer Family
Our family dairy farm is in Virginia. We've been to California AND Wisconsin to visit and do research on production, farming, etc. Wisconsin wins hands DOWN for being compared to California! REAL cows wander around in fields, not in "factories". :)

Or we have them bring some to us; which reminds me, I need to wolf down that brick of six-year-old cheddar from Carr Valley still sitting in the fridge, preferably with some of the Spotted Cow I also requested.
