Good fast easy recipes
I have two really tasty, fast, easy recipes. Do you have any that you can share?

PASTA SAUCE
1 can anchovies (you don't have to like anchovies to like this recipe)
1/4 cup of decent olive oil
1 or more cloves of garlic, sliced
salt
pepper

Heat the oil, add the garlic, add the anchovies and cook until they dissolve. Pour onto a pound of pasta with a little bit of the pasta water.

You can also add a couple chopped tomatoes or a can of stewed tomatoes.

SCALLOPS
3/4 pound of scallops. (If you use sea scallops, which I recommend, but are expensive, cut them in half.)
1 tbl of olive oil
1 tbl of butter
couple cloves or more of garlic (chopped very small)
parsley (chopped very small)

Heat olive oil under fairly high flame, add scallops, cook for 1 minute; add butter, when butter starts to foam, add garlic and parsley and cook for about 30 seconds more.

Instead of garlic and parsley, try whatever you have. Most things work really well.

1. Cuban black-bean soup.
1# chorizo chunks
1 #303 can chicken broth
2 #303 cans black beans
1 tsp. cumin powder

Brown and drain chorizo. Combine remaining ingredients and simmer one hour. Serve with sour cream. :)

5. This is almost the same as my 'Portugese' black bean soup....
I add tomato paste or sauce, chili powder, and some fresh or frozen green beans, carrots, onion and garlic....
I also saute the chorizo first to get rid of some of the excess fat.

Yummy!

2. Meatsa Pie
1lb ground sirloin
1 can evaporated milk
Seasoned Breadcrumbs (about a cup)
Italian Seasoning
1 jar marinated sliced mushrooms (yes jarred better than fresh here)
Marinara sauce (store bought fine)
sharp cheddar cheese
dried basil

in a bowl, mix meat, milk, breadcrumbs, seasoning, salt & pepper
cover bottom of pie plate with meat mixture pressing evenly and up the sides (like a meat pie crust)
spread Marinara sauce evenly over bottom
place layer of mushrooms evenly on top of sauce
place 3-4 cheddar slices on top (like spokes in a wheel)
sprinkle basil on top

bake at 350 for 20-30 minutes (until sides of pie are 'well done')

slice and serve

3. Sausage and rice
Sauce -

Mix one-to-one honey and bottled picante sauce (mild to hot, depending on your taste)

Slice your favorite cooked sausage links into bite size pieces and add to sauce.

Serve over your favorite rice.

4. My favorite healthy fast meal....
Warm crusty bread, or pita bread.

Sautee (briefly!) any fresh dark green veggie in olive oil and lots of fresh garlic. Add a little salt.

Heat up big jar of any white beans, mash or blend with hand mixer, add fresh lemon juice (I like lots) and some crushed red pepper flakes to taste. (Salt)

In a bowl or on a plate, make a nest in the middle with a good serving of the greens, scoop the beans in the nest and serve with the crusty bread.

This is really delicious! :-)

6. Greek keftedekia (meat balls) and ztatziki
1 lb ground round
1/2 lb ground pork
1/2 cup bread crumbs
2 cloves garlic minced
1 egg
sour cream to taste
dried oregano & basil 1 tsp each
salt & pepper to taste

form into small balls (inch & a half in diameter roughly)
fry in olive oil on medium heat until golden brown and cooked through

ztatziki

1Cup plain yogurt
1/2 cup sour cream
1/2 English cucumber grated
2cloves garlic minced
juice of one half of a lemon
salt & pepper to taste
Mix all together and then
let sit in fridge for an hour or so before using.

This is great with rice or potatoes and Greek salad

7. Potato scramble
3 eggs, scrambled
6 slices bacon
1 large potato, diced
Sliced mushrooms, to taste

Brown bacon and remove. In bacon drippings, brown potato. Crumble and add bacon, mushrooms and eggs. Cook until well done and serve with tomato slices and toast.

8. Beef Stew w/Rice
1 Can Chunky Beef Stew
1 Cup Rice

Boil Rice, drain, put back in pan with can of soup, heat contents, serve.

Good for when you're really really hungry, or it's wicked cold outside. :7

9. Hammered Chicken in a bun
1 Store-brand breaded chicken patty - precooked
1 splat of pasta sauce
1 handful of mozzarella cheese
1 bread roll
1 Sam Adams Boston Lager

Broil chicken in oven on foil until crispy
Slap on sauce and sprinkle cheese, heat until melted
Manipulate chicken from foil to sliced roll with spatula
Open Sam Adams, pour in clean glass, consume with sammich

Put roach at bottom of glass, "hidden" if possbile
Fill with ice
Fill with cola of your choice
Optional: Rub earwig around rim of glass before serving, coat with sugar

Swish, swig, and sigh contedly.

Serve with rat-tail pizza for an evening of true hedonism.

12. Pops artichoke chicken
(my dad invented this one-very tasty)!
Preheat oven to 375 degrees. Take several free range chicken breasts and place in a glass baking pan (I use the 9 x 13 inch size). Pour olive oil over the chicken, coating completely and pouring enough to cover the bottom of the pan.Then coat chicken in Italian bread crumbs. Place back into pan and add marinated artichoke hearts (pour some of the leftover marinade into the bottom of the pan). Dust artichokes with breadcrumbs. Bake at 375 for about 50 minutes. Yum!

15. Shrimp Fajitas

1 - 1 1/2 lbs Jumbo Shrimp (peeled & de-veined)
1 Green Bell Pepper (thinly sliced)
1 Red Bell Pepper (thinly sliced)
1 Yellow Onion (thinly sliced)
2 Cloves Fresh Garlic (minced)
1/2 cup Fresh Lime Juice
1 cup Cilantro (chopped & loosely packed)
Dash of Salt
Dash of Black Pepper
Dash of Chili Powder
Pinch of Cayenne Pepper
1 tbsp vegetable oil

In a medium sized bowl, mix lime juice, garlic, cilantro, salt, black pepper, chili powder, and cayenne pepper. Add shrimp to the mixture and marinate for 20 minutes at room temperature.

In a large skillet, heat 1 tbsp of vegetable oil. Add sliced vegetables and cook until they begin to go limp (about 5 minutes). Remove vegetables and place in covered dish where they will remain warm. In the same skillet, add shrimp and marinade and cook for 3-5 minutes. Add vegetables to shrimp mixture and cook both together for an additional 3-5 minutes.

Serve with tortillas, sour cream or plain yogurt, and guacamole.
