Make or buy 2 pie crusts.
10 peeled and sliced plum tomatoes. (to peel easily, drop the tomatoes in boiling water for about 20-30 seconds and then transfer to ice water until they cool. Then peel)
1/4 cup of fresh chopped basil
3 scallions chopped
1 1/2 cups of shredded sharp cheddar cheese
1/3 cup of mayonnaise
2 tablespoons of lemon juice
1/2 teaspoon of kosher salt
a dash of pepper
Heat your oven to 350. Lay one pie crust. Add the tomatoes, scallions basil and top with 1/2 the cheddar cheese.
Mix the mayonnaise and lemon juice, salt and pepper and pour over the tomato mixture. Top with the rest of the cheddar cheese. Cover with the second crust, make about 4 slits and bake for 45-50 minutes. Let this cool a minute or so before you serve. This is good cold too but the crust is not so good if frozen and then reheated.
