Hi Lounge folk!
I need some help.

I had a party this past weekend and I have tons of leftovers. The bulk of the leftovers is a bunch of veggies that I had on a tray. I don't want them to go bad.

Here is my list:

Yellow squash

Carrots

Celery

Baby tomato's

broccoli crowns

Red bell pepper

I was thinking a veggie soup or something, but I have no recipe inclination.

What would you do?

Where is Bi-baby when I need her? :)

1. Mmm! Fabulous. I'd do soup.
I would use the squash, carrots, celery and broccoli, and stir-fry them a bit with some onions to sort of pre-cook them, then I'd cook them in a vegetable or chicken stock. I'd use the pepper and tomatoes in a salad. :D

2. How long do you cook it?
Do you just add all the veggies at once in a pot?

3. Well...
I'd stir-fry the whole batch for about two-three minutes first. I'd start with onions and garlic and stir fry them over med heat until the onions are clear and maybe a little brown. Then I'd toss everything in there and just let them get a little stir-fry oil coating on them.

Then I'd bring the broth to a boil, and add the carrots, celery and broccoli to the pot first. They're a bit harder than squash. Then let it simmer for about 10 minutes and then add the squash. If it's soft squash. If it's very hard squash I'd add it with the others. Then chuck in a bay leaf or two.

Then I'd just let it hang out for about 20 more minutes and check the carrots to see if they're getting soft. I'd add whatever spices I had, maybe oregano, parsley, that kind of thing.

And THEN I think I'd make some rice and serve the soup over rice, but that's because I feel like rice today. I'm getting hungry! LOL.

4. here's what I'd do....
actually do this ALOT and call it dinner (but i'm a veg-head). Now you know how much I dislike cooking.....

Cut things into big chunks. Toss with olive oil and Italian seasoning. Bake in the oven at 425 degrees until they get really browned. Probably 35-45 minutes at least. Personally, I like them to start to get almost burned.

Couldn't be easier, IMHO.

Maybe you'll like??

The tomatoes won't work in a stir-fry, but the rest of it does.

Olive oil w/ a little sesame oil thrown in for flavor.

Cook the carrots first.

Add whatever meat, or tofu you like with the rest of your veggies. Chop an onion up and add that too, also a couple of cloves of garlic.

You can make an easy stir-fry sauce using soy, chicken broth, cornstarch (just a little for thickness) and ground ginger. Throw that in and toss it all together

Serve it over rice or noodles.

6. The tomatoes work if you put them in last
and just heat them up a bit, though.

I love tomatoes with stir fried veggies.
