22. It's goooooooooood.
And it really, truly does melt. Taste and texture-wise, it's like working with fresh mozzarella.

They're still tweaking the formula a bit, trying to get it to have the stretch of dairy cheese. They're also going to come out with other flavors. The chicago soydairy guys all post on another forum I use, so I hear things. ;)

They have a mix out for their ice cream now. I really want to try that soon.

Unless you order something else, don't bother with a cold pack or expedited shipping- I got mine straight from the manufacturers, and they just ship it ground with no problems. That's another thing, unlike the other vegan cheeses I've tried, it keeps well in the fridge once opened. The closest competitor molds if you look at it funny- I never managed to use up an 8 oz pack, and my 3 lbs of teese (well, it's about a pound and a half now, I went a little nuts making pizzas) is in fine shape just chilling out in some tupperware in my fridge.

44. The funny thing was, they thought they'd just wholesale it.
My order just came in plain blue plastic because they hadn't even got proper packaging to label it for retail sale yet. I think they're a bit overwhelmed. :D

Anyhow, Cosmo's Vegan Shoppe and Pangea both have it in (and Cheezely, which is this super great stuff from the UK, which I used to have to get by having friends smuggle it across the pond.)

I'm thinking I should make one with pesto in place of red sauce, just to be different. And there's a recipe for a vegan white sauce floating around that I still haven't tried.

I do stuff by eye. If I want to share I have to get down in the kitchen and figure it out, then write things down as I go.

But I have the world's most ridiculous collection of vegan cookbooks (Lately I'm in love with sketchy looking little zine cookbooks. They're short, so there's not so much filler and it's mostly just people's most kick-ass recipes. I should totally write one, but I can't draw for shit so I have to get somebody else to do the art.) so I could look one up for you. :)

I would guess that I spend a fair amount of time compared to most, just dreaming about fried chicken and waffles. Apparently it's a thing in the south east, but I know about it from Roscoe's chicken and waffles in LA. Damn, is it good.

Thin spaghetti, with asparagus pieces that were tossed with a bit of olive oil, salt and pepper, then roasted for 20 minutes at 400 degrees. Add a bit more olive oil, minced garlic and parmesan cheese. A sliced tomato on the side.

Can't get any more specific than that. Although, it's a bit of a problem as especially for my brother he finds the smell in the kitchen rather repulsive. Come to think, I think I'll be the only one. Don't know what the rest of us will be indulging themselves in.

We had tabouli, dolmas and gyros. My DH had a steak in his gyro and I had falafel in mine, they were topped with tzatziki sauce, red onions, tomatoes and cucumber slices.

DH is the lucky one, he just got to eat it, I had to make it. You can buy Greek yogurt now at most grocery stores, and if you can't find it you can just drain regular yogurt thru coffee filters or cheesecloth. :hi:

76. Bean soup
However, every single time I have ever cooked beans from dried or, as in this case, dried soup mix, it always takes at least twice as long as the instructions say to cook them. No matter how exactly I follow the recipe or directions (and I do know how to cook) one type of bean or another comes out uncooked. I could soak them for 24 hours and then pressure cook them and they will still come out uncooked!

So, tonight, I went ahead and cooked the recipe for half an hour past the max given (90 minutes) and the fava beans were still crunchy. I just left the whole pot on the stove for another hour and enjoyed what I could of the rest of the soup. I will find out tomorrow at lunch if beans just simply hate me and refuse to be cooked by my hands

What I did eat was tasty though

Just one thing, if you salt the beans before they are cooked, they won’t soften up. It is a silly thing and you would never think of that, but it is true.

I get this one by the box since I drink half a bottle a day:

GT's Raw Organic Kombucha

I like the all green one best and I've never really liked all those "green" drinks much. Always way too bitter. The kombucha tastes wonderful! :D

83. old fashioned salmon loaf, roasted potatoes, green & wax beans
A grandma-type dinner. It gets silly, because one teen won't eat diced onion so her portion has to be made separately. And I can't eat the potatoes -- too many carbs -- so I have to eat LOTS of the beans. Otherwise, it's just like being at grandma's house except that she used canned beans and these were frozen.
