15. Leftymom...what do you use in your cookies for the egg?
I know you're a vegan, and I was just curious. I assume you probably use vegetable shortening instead of butter in your baking...but what is a vegan substitute for egg? Thanks.

18. Butter I use a 1:1 replacement with Earth Balance spread
For eggs when used as a binder I use Ener-g egg replacer http://www.ener-g.com/store/detail.aspx?section=8&cat=8&id=97

In some other recipes other substitutes for eggs can be used, ranging from fruit purees (used when eggs are used to add moisture to baked goods) to tofu (blended into baked goods for binding and firming, or to add protein and a more dense texture) but for cookies the egg replacer works wonderfully.

19. Thanks! I've heard of replacing the fat in baked goods with applesauce...
or other wet fruit puree.
But I've never heard of using tofu as a binder. I imagine you'd use silken...right?

20. Yeah, silken run through a blender or processor works great for pies and quick breads.
I've got a chocolate chip cookie recipe around here that also uses blended silken tofu, supposedly it makes a very moist, decadent cookie but i haven't tried it yet.

24. which every one I just baked
today's favorite is a Cream Cheese sugar cookie that I brush with the egg white and sprinkled red sugar sprinkles on :9

INGREDIENTS

* 1 cup white sugar
* 1 cup butter, softened
* 1 (3 ounce) package cream cheese, softened
* 1/2 teaspoon salt
* 1/2 teaspoon almond extract
* 1/2 teaspoon vanilla extract
* 1 egg yolk
* 2 1/4 cups all-purpose flour

DIRECTIONS

1. In a large bowl, combine the sugar, butter, cream cheese, salt, almond and vanilla extracts, and egg yolk. Beat until smooth. Stir in flour until well blended. Chill the dough for 8 hours, or overnight.
2. Preheat oven to 375 degrees F (190 degrees C).
3. On a lightly floured surface, roll out the dough 1/3 at a time to 1/8 inch thickness, refrigerating remaining dough until ready to use. Cut into desired shapes with lightly floured cookie cutters. Place 1 inch apart on ungreased cookie sheets. Leave cookies plain for frosting, or brush with slightly beaten egg white and sprinkle with candy sprinkles or colored sugar.
4. Bake for 7 to 10 minutes in the preheated oven, or until light and golden brown. Cool cookies completely before frosting.
