Chicken Enchiladas
Here is my recipe for the Chicken Enchiladas


Flour (or corn) shells (I prefer to use the small flour shells)
Onion-- diced
1/2 stick of butter
2 large cans cream of mushroom soup
2 large cans cream of chicken soup
large container of sour cream
2 cans diced green chilis
6 boneless chicken breast
Cheese Mozz and Cheddar

Boil chicken and tear into small pieces

Saute Onion in butter

Mix soup, sour cream, chilis and onion.
Put a small amount to the side to spread over top of the shells.
Add chicken to the remaining mix.

Spoon into shells and roll

Spread sauce mix with out chicken over the top.

Cover with cheese as desired

cover pan with Aluminiom foil

Bake at 350 degrees for 30 minutes

3. you want an easier version?
chicken, corn torillas, green enchilada sauce. Layer in a casserole pan and bake till cheese melts.

When you say "shells" do you mean tortillas? Or do you mean crispy like taco shells?

6. Sorry, but you lost me at the cream of soups.
Too much sodium and I'm a cream of whatever soup snob. It's just as easy to make it from scratch.
