How you doing them? what are you using for wood? I use 2/3 white oak to 1/3 hickory when smoking beef& pork and I use all fruit wood for poultry. I have a big Kingfisher pit, 40" cooking area with off-set fire box. I use a big Webber as an extra pit to keep logs burning for coals. I can smell it now.

16. Well, I was going to use some apple and hick'ry
But I couldn't get a-hold of apple and the meat had to be cooked. So, looks like it's straight hickory. It'll be alright though.
