12 pound frozen turkey, without removing the wrapper, how do I tell if it is thawed?

It'll be thawed out then.

Actually, I have no idea so don't do that. I had my first deep fried turkey on Thanksgiving and it was delicious.

keep refreshing the water... all night if you have to!

If you can pull the innards out, (that package of guts), then it should be thawed! ;)

6. this is your opportunity to brine that bird
Brining a turkey will bring you infinitely better results than just roasting would. Unwrap the bird, pull out the giblet package. Make some brine. Two gallons of water, a cup of salt, a cup of sugar, a sliced lemon, some herbs, an onion, whatever. Put the turkey in a big pot. Pour the brine over it, and add more water if necessary to cover. Put it in the fridge if you have room, or add a lot of ice cubes to the pot, or put it outside if your weather is cold and you have a safe place for it.

It will be thawed enough to cook in the morning. And your turkey will be more moist and flavorful for the brining.
