3. First...
you eat turkey and stuffing covered in cranberry sauce until the latter two items are gone. Those items will be exhausted long before the turkey is. The rest of the turkey gets made into Turkey Taco Bake:

Turkey Taco Bake

1 can cream of roasted chicken soup with herbs
½ soup can warm water
10 oz. sliced turkey meat
1 pkg. of 8 oz. mild or spicy shredded Mexican cheese blend (2 cups)
3 cups slightly crushed corn tortilla chips (divided)
1-cup mild or medium salsa

Preheat oven to 350 degrees. In large bowl combine soup and water. Add turkey, one-cup cheese and 2 cups crushed tortillas. Toss, and place in 7 x 9 or 9 x 11 square pan, greased. Spread salsa evenly over mixture and top with remaining tortilla chips and cheese. Bake approx. 40-45 minutes.

The following items may be served with this dish or as layers in the casserole:
Avocado slices, diced tomatoes, black olive slices, sour cream, and/or fresh cilantro.

5. Good idea. We've got two of those.
I really can't stand our neighbor. He doesn't feed his two cats--a black one who looks so much like one of ours (we have indoor cats) that every time I see her I think our cat got out, and a gray-and-white one. Every time I cook on the grill they come out of nowhere and start yowling at me. Unfortunately I'm usually cooking sausage links or something I can't "pinch off a piece" for them. So putting out some leftover meat for them would work. Wouldn't attract vermin either--there are so many outdoor cats in our neighborhood the entire place is mouse- mole- chipmunk- and squirrel-free.

20. Stock simmering as I type - here's my recipe.
In my stock pot is:

Turkey frame
Can of chicken broth
4 Carrots - cut in half
4 Ribs of celery - cut in half
1 Large Onion
2 Parsnips, peeled and quartered
1 Head of garlic - pan roasted
Cold water - enough to cover
Salt
Pepper

Bring to a boil and reduce to low for several hours, occasionally skimming off any foam residue.

Remove from heat and strain, seperate any meat from bone. I also prefer to clarify the broth before I add meat, carrots, green beans, and any other veggies I find laying around. Then I bring to a boil again and simmer for another 60-90 minutes - adding whatever pasta/barley/rice I feel like at the moment.

8. I'm having turkey on sourdough right now -- breakfast!
The breast meat is for sammiches. The rest goes into a broccoli-curry-turkey-cheddar casserole, turkey and gravy in piedough turnovers, turkey stir fry with all kinds of vegetables, turkey wild rice soup.

Or it would if a 20 pound turkey would stretch that far. Luckily, I have another turkey in the freezer.

for another dinner.

We got a really big bird this year, so we would have lots of leftovers.

"you don't need them. You have plenty of food."

Not now i don't, after cooking a lot of it for them.

Next year I go back to cooking for the homeless.

I have half of a 12 lb turkey left over.

I want to make this recipe I saw on Rachel Ray. It looked delicious to me! :D

Thanksgiving Stromboli

Ingredients


* 1 tube refrigerated pizza dough, such as Pillsbury brand
* 2 tablespoons all-purpose flour or cornmeal
* 1 cup leftover cranberry sauce
* 3 cups leftover turkey, shredded
* 2 cups leftover stuffing
* 2 cups aged white cheddar cheese, shredded
* 2 tablespoons extra virgin olive oil (EVOO)
* 2 tablespoons sesame seeds
* 2 cups leftover gravy

Preparation

Pre-heat oven to 400°F

Break open the tube of dough and remove it from container. Dust your hands and lightly coat the dough with flour or cornmeal, then roll it out onto work surface. Stretch the dough out gently so that is an inch larger than when you first take it out of the roll (but in the same rectangle shape that it has initially). Spread the cranberry sauce in an even layer over the dough, making sure to leave an inch border around the circumference of the rectangle.

Layer the turkey and stuffing down the middle of the dough going from one corner to the opposite corner in a diagonal line. Cover the turkey and stuffing with the cheddar. Bring one corner of the dough up over the turkey mixture, then roll the dough on an angle to make a long roll that is thick in the middle and thinner on each end. You should have turkey mixture running down the middle with some filling exposed at each end.

Brush the stromboli with EVOO, then sprinkle the sesame seeds on top and pat them into the dough. Place onto a baking sheet and bake for 20-25 minutes, until evenly golden. Serve with leftover hot gravy alongside.

MMMMMMMMmmmmmmmmmmmm! An after-Thanksgiving "have-to" in my house for many years.

TURKEY TETRAZZINI

10 oz. mushrooms, sliced thin about 4 cups
5 tbsp. unsalted butter
1/4 c. all-purpose flour
1 3/4 c. milk
2 c. chicken broth
1/4 c. dry white wine
10 oz. spaghetti
3 c. coarsely chopped cooked turkey
1 c. cooked peas
2/3 c. freshly grated Parmesan
1/3 c. fine fresh bread crumbs

In a large heavy saucepan cook the mushrooms in 1/4 cup of butter over moderate heat, stirring until most of the liquid they give off has evaporated. Stir in the flour and cook the mixture over low heat, stirring for 3 minutes. Add in a stream (that is pour slowly) of milk, the broth, the wine, stirring bring the mixture to a boil, stirring and simmer the sauce for 5 minutes. In a pot of boiling, salted water cook the spaghetti until it is al dente (cooked) and drain it well. In a large bowl combine well spaghetti, the mushroom sauce, the turkey, the peas, and salt and pepper to taste. Stir in 1/3 cup of the Parmesan, and transfer the mixture to a buttered shallow 3-quart casserole. In a small bowl combine the remaining 1/3 cup of Parmesan, the bread crumbs and salt and pepper to taste. Sprinkle the mixture over the tetrazzini and dot the top with the remaining 1 tablespoon of butter, cut it into bits. Bake in 375 degrees F. oven for 30 to 40 minutes.
