Okay, what's everyone cooking tonight (or tomorrow morning)

for Thanksgiving din-din?

We're not hosting but we're going to a breakfast and two dinners. For the breakfast I'm bringing fresh fruit (pineapple, grapes, watermelon, berries, pomegranate, mango and oranges) and some Trader Joe's English Muffins. For the one dinner I'm bringing blanched asparagus with a balsamic reduction and for the other I'm bringing tomato salad (grape tomatoes, tiny mozzarella balls, fresh basil and balsamic dressing). I like bringing dishes that are good at room temperature. It's so much easier.

I'm also bringing chocolate mousse pie that my diabetic husband can eat. I make the chocolate mousse with silken tofu, GOOD dark chocolate and agave nectar. The crust is made with almond flour and finely grated coconut. It's so delicious no one knows that it's not full of heavy cream and tons of sugar. Even my husband's nieces who turn their noses up at everything LOVE that pie.

1. Tonight: Beef stri fry.
Stri fry is a lot like stir fry, but with more garlic.
OK, it was a typo, but I thought it was funny and left it in.

4. We are having:
Turkey with stuffing made with fresh sauteed onions, fresh cranberries and chunks of granny smith apples; mashed taters (yukon gold I think?), butternut squash, peas and pearl onions, home made rolls, gravy, and some sort of awesome casserole made with creamed corn, cornbread, and cheese. For dessert we'll have squash pie, blueberry pie (Grampy picked the berries himself this summer), gingerbread, and apple crisp.

We have way too much food for 4 adults to eat. So come on over!

I don't miss too much about my childhood but I do miss the pies I used to make for Thanksgiving. I come from a HUUUUUGE family so I could make 12 pies and they'd be gone by the next day. We did a lot of picking and freezing fresh fruit in the summer so there were always several pies made from hand-picked fruit from either the garden or local orchards. Blueberry, black raspberry, ground cherry, gooseberry, strawberry rhubarb. Pumpkin and apple were secondary to those favorites. Even back then I used to make a chocolate mousse pie, although it had A LOT more fat and calories.

8. Hooray for make ahead recipes
I've already made dinner rolls (in the freezer until an hour before dinner), potatoes baked in cream that just need a final baking (I had leftovers from the prep so baked a small portion and they are YUM), and a cream cheese coffee cake in the fridge ready to bake tomorrow morning. I still have some apple tarts to mostly make- cook apples with sauce and place on unbaked pie dough rounds, then bake when ready.

9. tonight: mixing up roll dough and setting it to rise in the refrigerator
and a nice ham and swiss sandwich for myself as I am alone for supper tonight.

I already baked a cake which is in the freezer, and in the morning I will put together a squash casserole, pan up the rolls to rise for baking, and prep my asparagus which I will steam at the hostess's house while the rolls are baking.

I do have to make a run over to her house tonight to drop off some things she is borrowing from me, tablecloths, platter, stuff like that. Guess I better get the rolls going, my daughter's boyfriend is probably going to take over my kitchen when they come in tonight, he is making a chocolate cheesecake as his contribution to the dinner.

10. today I brined and roasted the turkey (it's almost ready to come out)
and baked cornbread for dressing tomorrow

also make turkey broth for the dressing

I'm taking the dressing and bird to a potluck so I'm doing the dressing in a crock pot in the morning so it will stay hot and be easy to serve

that's about it for me today except for doing laundry, lighting the furnace (sleet and snow expected tomorrow) and fixed the ice machine on the fridge
