Any Afghani cooks here?
I have an Afghani restaurant just up the street from me - I love it. My favorite dish is a cauliflower dish called "gulpi".

I don't even LIKE cauliflower, but I adore this dish. I can't find a recipe on the web... anybody know how to make it?

...I don't know if she's still doing it, but she was trying to go around the world in cuisine, alphabetically! :)

The beauty of this method was that she got into Afghani stuff right off the bat. I've made a few of these dishes off her page, and they were great!

. . . restaurants will give you a recipe. There was an Afghan restaurant in Madison I loved to go to, particularly for one of their soups. When I moved to Wyoming, I wrote them, explained I wouldn't be able to get back for a long time, and would they give me the recipe? They did. I made it. It was good. (Theirs was still better, though. :) )

10. Dookus... Are there any potatoes in this dish? Lentils?
There is a Pakistani cauliflower and potatoe dish I know called Gobi or gobi dahl. Let me know what other vegetables are in the dish (or hell whatever other details you can remember and I'll see what I can do). And are you sure about that spelling? Peace


4 tbsp oil
1 onion, chopped
1 garlic clove, crushed
1 inch piece of root ginger, grated
1 tsp ground coriander
1 tsp ground cumin
3oz red lentils
2 tbsp curry paste
½ pt canned coconut milk
½ tsp garam masala
½ pt vegetable stock
1 ¼ lbs cauliflower florets
1 tbsp lemon juice

Method:
Cook Cauliflower until just tender.
Heat the oil and add curry paste, onion, garlic, ginger and dry spices. Fry gently for 5 minutes.
Add lentils and stock. Bring to the boil, cover and simmer gently for 10 minutes
Add coconut milk and continue cooking for a further 10 minutes
Add Cauliflower, stir and heat through gently.
Add lemon juice, stir and serve with rice or naan bread.

no other vegetables. Just cauliflower stewed in some sort of delicious orange sauce. The sauce is clear, not opaque. And it's called "Gulpi" on the menu.

12. Dookus my friend, I'm afraid you're on your own and are going to
have to rely on your charm to pry that recipe from the restaurant's cook.

Damn... It's nowhere in any of my exotic cook-books and nowhere on the web. I can tell you who serves it, what's in it, and how highly praised their version is but damn, I cannot find the recipe.

As a cook who loves challenges, this really really bothers me!

who was raised in Afghanistan as the youngest daughter of a family with 6 wives. She had six mothers teach her to cook - and lordy, can she ever!

on edit: if you're ever over the hill, we can eat there- see if you can figure any of it out by tasting it.
