2. I'm west of Atlanta.
Want to start doing some container/square foot gardening again this spring after a hiatus. I'm thinking some veggies that do well here and maybe a few flowers. Something that will deal well with reuse water, given our drought.

7. You know growing season is all about the light right?
And that most plants have a flowering season that is determinate?

Anyways, I do half of what you do, that is, get the plants a good start. I build raised beds and then set 4X4's at the corners and then cover with plastic. Then I can get my plants in the ground early and strip the plastic off so the plants do not get burned by the heat. In hot climate areas most plants cannot survive greehouse growing during the summertime. If you live in NE or Minn, the a greenhouse would help you. But georgia, not likely.

I live in Texas, so its used mostly to over-winter potted plants (and I use the word "winter" lightly being in Texas and all) and start seedlings I plan to transplant in the spring.

Doubt I'm the only one here, but let me know if you have a specific question. I might have a specific answer ;)

12. Sounds like you might want cold frames as opposed to a full-on greenhouse
Cold frames are inexpensive little mini-greenhouses that are easy to build yourself.

You can use them to push the growing season forward a few weeks, and probably use them again in the fall to push the growing season back too for late vegetables, without the hassle and expense of having a large structure.
