Dinner was a home run!
My wife has had a busy week and I knew she was going to get home late tonight. So I got busy in the kitchen and cooked up coconut rice, chicken marinated in a cranberry citrus sauce, sliced cucumbers with spicy bamboo shoots and daikon kim chee on the side. Then I topped it off with a tray of grapes, mangoes, kiwi, and pineapple.

She usually hates it when I cook because I take a lot of risks and experiment with whatever ingredients I have on hand. Most of the time my dinners are so-so. But tonight she told me I knocked it out of the park. We can't wait for tomorrow's left overs. :woohoo:
